Chicken fried rice

Does anyone have a nice tasty recipe to share? I've tried a couple of different ones but they were quite bland. I'm not sure what herbs or spices to add to make it more tasty.

Nothing beats chicken fried rice (or any fried rice) from the Chinese. Save yourself the effort and just order it. In all my years of cooking I've never been able to replicate the same deliciousness.

Plenty of sesame oil in pan, crack in eggs and scramble lightly.

Add garlic, cooked rice and soy sauce, fry until rice is thoroughly coated. Add chopped spring onion for last minute.

I think it’s the sesame oil that makes it taste like it does from Chinese restaurants.

you need both light and dark soya sauce + bit of sugar

when you fry the rice either add ginger or garlic (grated). fry individual ingredients separately to avoid overcrowding pan and rice becoming soggy. dice veggies to really small size. I cook the veggies first. remove. then eggs. remove. then spring onions (white part only) and chillies. add rice and ginger or garlic (not both). keep frying until cooked. add in all other cooked ingredients incl cooked shredded chicken. then add sauce towards the end. + green parts of spring onion. sesame oil right at the end.

most important use a wok and only use fridge cold rice with the grains fully separated. do NOT use boil in the bad rice etc . the rice has to be cooked perfectly.

I use Becky Excel’s recipe. Put oil in pan, beat an egg in a cup then put it in pan and fry/ scramble, add rice and some frozen peas, put on lots of sesame oil then fry for 5 mins or so.

We use a rice cooker first to get the perfect rice. Sesame oil and garlic as others have said. Also a small amount of oyster sauce makes a difference. And a garnish of spring onion.

If you can get hold of chicken stock powder, a teaspoon or 2 makes all the difference. I crumble in stock cubes now as Knorr no longer sell it in UK but it’s not quite the same. I don’t find any difference between using rice I’ve cooked and cooled and using precooked sachets. Drizzling sesame oil at the end also helps with flavour.

Don't fry in sesame oil, it's too expensive and delicate for that. Fry in peanut oil, then drizzle sesame oil at the end.

Restaurant fried rice is tasty because they use shitloads of oil. Yours will be just as tasty if you do the same.

Amazon sell it, but I think it's only in 1kg tubs.

You need to start off stir frying the holy trinity: garlic, spring onions and ginger, final seasonings are salt, pinch of sugar, white pepper and 1/2 light and 1/2 dark soy sauce. Add some chili if you want a kick of spice
