Anyone found any midweek gems of late? Looking for really tasty, easy midweek meals?

My sister recently introduced us to this gorgeous and easy recipe that will definitely become a regular for us. It's healthy, delicious and quick to prep (although does need a while in oven). Got me thinking there must be so many more like this that I just don't know about. Has anyone stumbled across some recently?

Sister's recipe:

Coat chicken thighs in yoghurt and sweet pepper paste. Make sure bottom of roasting tin is covered in this too.
Chop onions, aubergine, potatoes and courgettes and place them in roasting tin around the chicken.
Dab sweet pepper paste on top of the veg.
Cover with foil and roast at 160 in oven for one hour.
Remove foil and roast for additional 20 mins.
That's it, and it's so tasty!!

We recently started having creamy canellini beans thanks to Instagram.

Lightly saute chopped onion until soft.
Add chopped garlic and halved cherry tomatoes. Fry for a minute then put the lid on and temp down to leave it to soften.
Add a tin of cannelini beans and just enough water to almost cover so they can warm through.
Add a big dollop of cream cheese and generous squeeze of lemon juice. Stir through to melt. Add babt spinach to wilt. Season.

Serve on bread/potatoes etc. Delicious. I see this as probably at least a once a month new meal for us.

We tend to find it in the Turkish supermarkets near us. It's like tomato paste, but made with sweet peppers instead. It's magic stuff.

Warm a tortilla in a pan. Add a dollop of mixed beans in chilli sauce, avocado, grated cheese, fold in half, fry on both sides- quesadillas!

Optional other fillings include cooked chicken, black beans, chopped peppers and onions (pre-fried!)

Mix soft cheese with a few teaspoons of pesto and spread over bashed out chicken breasts. Bake in oven till cooked through. I add a tomato salad and rice but its lovely with spuds or even pasta with the rest of the pesto. Takes about 30 mins total.

This is a new fave on our house…

Put sun-dried tomato oil (from the jar) in a pan and heat. Add chopped chicken and brown all over. Remove chicken and add a chopped onion to a the pan, cook until soft then add two grated garlic cloves and put the chicken back in the pan. Add some chopped sun-dried tomatoes, a sprinkle of paprika, oregano, S&P and some orzo to the pan and stir. Add chicken stock, cover and cook until orzo is cooked. Stir in some cream cheese and some baby spinach and serve.

Ultimate lazy midweek dinner for us is roast some chicken drumsticks (on a glass baking tray / oven dish so it can go in the dishwasher), boiled / steamed / microwave rice, peas and sweetcorn. Use any seasonings you like for the drumsticks, I tend to do salt, onion powder, garlic granules, smoked paprika. Old Bay seasoning is really good too, as is Cape Herb Louisiana Cajun Rub (nice and spicy, available in Asda and Sainsbury’s, so probably most supermarkets).

Another one is bake salmon fillets in foil parcels with butter, lemon juice, chilli flakes, maybe some capers if you like them. Serve on top of tagliatelle with all the cooking juices, with spinach or salad on the side. Can also cook frozen leaf spinach in with the tagliatelle instead of fresh spinach.

Or if you just want to do a big pasta mess sort of dinner - cook penne or fusilli, after about 5 mins, throw in frozen sweetcorn and frozen spinach. Once all cooked, drain, add tin(s) of tuna, and sundried tomato paste / red pesto / chilli pesto. Mix it all up, serve with salad if you feel you need more veg, lots of grated cheese, and maybe garlic bread if you need even more carbs (this one’s a store cupboard staple for us).

This sounds delicious - a bit like Tuscan chicken. How much chicken and orzo do you use?

This was amazing - really easy but tasted like something from.a restaurant. The fish was cooked so delicately. Forgot the mascarpone but didn't miss it. Next time I will do double the lentils and freeze half to have with something else - it would go well with chicken too, or sausages.

Coconut and spinach fish curry

This takes about 15 minutes and can be made almost entirely from freezer/storecupboard items. It’s really good.

Finely chop an onion and saute gently in oil until soft. Add garlic, grated ginger, chopped chilli and 1 tsp turmeric. Add 100ml coconut milk per serving and some soy sauce. Then add about 50g spinach per person (frozen is fine) and 100g white fish per person. Cook for 8-10
minutes until fish is cooked through. Serve with rice.

@ronconcoke It’s really tasty! I use three large chicken breasts and 400g of orzo for 4 of us and it’s plenty.

I bought some while on holiday in Hungary, but now buy it from Amazon.
It's quite unique.
