Fairy cake mixture question

Can I make up a fairy cake mix and then store it in the fridge over night?

I want to make fairy cakes next time its coffee morning here. But I want them to be cooked fresh for the kids to eat them.

So I wondered if I could prepare the mixture the night before then pop it in when they get here?

Also just used my Pampered Chef mini muffin tray to make some mini fairy cakes and they were yummy. 24 nearly all gone in 5 mins!!

I would think not.

Certainly not if you don't use any baking powder and beat the air in by hand, but I suspect 9using standard all in one recp) the rising agents time frame of action does not last forever and you would have fairy biscuits if you made the mix the day before.

Of course this being mn half a dozen posters will be along to say yes, absolutely, no problem.

ime what takes the longest is the measuring out ingerdients bit. So you could be super anal and have everything weighed out in little bowls (blue peter stylee) and then that morning stick the oven on at breakfast, whizz all the stuff up post brekkie and voila.

No I agree with Slub, the raising agent needs to get into the oven as soon as it meets liquid. Make them the night before and keep in an air-tight tin or just measure out all the ingredients so you can throw it together in the morning.

How about this:
cream the butter & suger together & put in fridge. Weigh out the flour & get baking cases ready. When you want to bake, beat in the eggs, fold in the flour and bake. You'd save all the prep time that way.

Fab ideas guys. I did think about maing them before and storing them in a tub but just wanted to be all homemakery and have the house smelling of freshly baked cakes!!

I'll do the 'get the ingrediants weighed out and ready' trick.

This is good for me. They are usually lucky to get a packet of biscuits!

Better get yerself a domestic goddess pinny princessmel. Actually if you ins=vest in a pinny you can buy the cakes and pretend you've made them

mel - alternative plan would be to make and freeze them and then "freshen" them up in the oven for a couple of minutes - except that everyone might then assume that you bought them.

If you want to do impressive domestic-goddess make it on the spot things, can I humbly recommend muffins? You can have all wet and all dry ingredients mixed up in separate bowls then just mix them roughly together (no creaming required) and bung in oven - instant homemaker credibility!

Just make Delia's all in one recipe.. have it ready to go in the oven as they arrive and all will be well. My record for thinking about making a cake to cake in the oven is 6 minutes using the all in one recipe..
Weigh it all out and then mix at last minute.
