Best lemon drizzle recipe please?

I want to make my dad a lemon drizzle for his birthday, I do have my own recipe but it always seems a little dry after a day or two (I need it to last a few days). Can anyone share their best lemon drizzle recipe?

The Tana Ramsey one is great, I use 2 lemons and 100g sugar for the drizzle and it always works. On BBC Good Food.

Felicity Cloake's perfect lemon drizzle. It's never had the chance to sit uneaten for a few days in this house but it's so wonderfully moist I have no doubts it would be delicious.

DowntonCrabby · 14/06/2024 15:33

I was jumping on to say Tana Ramsay too.

KrazyboutKillian · 14/06/2024 15:35

Nigella , never fails

I was going to suggest a recipe that I have written down from somewhere but then I noticed a PP mention Felicity Cloake. Any of her recipes are usually excellent so I had a quick look and the one I was going to suggest is remarkably similar - so, yes, go with Felicity Cloake would be my advice

The recipe I had also included 25ml of Earl Grey tea (stick a teabag in some boiling water and use that) and replaced some of the sugar with honey.

I always use the Mary Berry traybake recipe. Always turns out lovely.

Thank you, the Falicity Cloake recipe looks good, it’s similar to my recipe with the addition of ground almonds.

Definitely Felicity cloaked. It really is the perfect Lemon drizzle! Won’t cook any other now

If you won't use it for a few days maybe you could freeze it and drizzle it on defrosting?

I will be giving it to him tomorrow. He’s going on a fishing trip for 2 days so I wanted him to take it with him, he won’t be able to eat it all in one day so was hoping it would last a few days.

So do I. I now have a reputation as a fantastic baker, even though I don't have a wide repertoire.

Tulipvase · 14/06/2024 21:08

I made this the other day and it was lovely. I’m sure you could swap orange for lemon. I also didn’t have any polenta so used fine semolina, it was very moist.

Jane's patisserie lemon drizzle loaf cake. I've made it loads of times, it's a lovely recipe.

Clevs · 14/06/2024 22:07

This is the only recipe I have used: www.bbcgoodfood.com/recipes/lemon-drizzle-cake

I've no recipes to share as I only eat cake rather than bake cake, But came on to ask has anyone been here long enough to remember the epic 'lemon drizzle bitch' thread!
I remember it was amazing and involved a bake sale but I'm sketchy on the details.
Anyone remember?

Making DS 24, his birthday cake. He's asked for Lemon Drizzle cake.
In people's opinions, is it better to have an icing top, or the traditional granulated top?
I was thinking of doing Mary Berry's Traybake one.
I was also thinking of doing half and half, so granulated into the holes and lemon icing on top, but that may be gilding the lily?
What are you Lemon Drizzle Cake afionados' preference?

Farkinell · 17/07/2024 14:54

Another one here for the MB tray bake; it's delightful as a cake but also phenomenal as a pudding with custard.

I'm a heathen though and use caster rather than granny sugar in the topping as I prefer a more delicate crunch.

Hmm, good thought about the caster sugar.
Would you put lemon icing sugar on top?
Yup, heathen here too!
