Infusing flavour into sea bass

I baked some fillets on Saturday after marinating for an hour with lemon juice, mix herbs and a dash of olive oil.

It was ok but lacked flavour (for me) but 4yo DTS and DH liked it.

Would be grateful for any tips on infusing a more intense flavour into the fish please.

There is quite a large difference in flavour between farmed and wild sea bass but there is also a huge price differential. Seasoning is very important too, add loads of salt and pepper.

I buy my fish from an indepedent fishmonger so not sure if it was fresh or wild. Two fillets costs £4.89.

I did not add salt or pepper so maybe I'll do that next time.

I cook it with mushrooms and taters a la jamie oliver

Filleted fish always tastes less strongly than fish on the bone.

Sea bass is best whole, with several whole unpeeled garlic cloves and a couple of sprigs of rosemary in its cavity, baked in sea salt, fresh black pepper and oil at 250° for 15 minutes or so (dependent on size).

Lol thats what I was going to suggest.

Although my dad insists that flash frying fish is better.
