Roasting/grilling aubergines v. frying for moussaka

First attempt at moussaka. Don't fancy frying as convinced they'll end up a greasy mush.
What do people think about oven roasting or grilling ?

Maybe this is really common knowledge but I only recently learned about soaking aubergine slices in salt for 20 mins then washing it off before cooking.

All my aubergine was mushy before I learned this!

I am Greek and the moussaka will definitely taste better. If you fry them in hot oil and drain them properly they shouldn’t be too greasy.
we use potatoes and aubergenes
However, you can also put them in the oven too. I wouldn’t put them in raw aubergine, does really need to be cooked first before putting in a moussaka.

I made moussaka yesterday Aubergine sliced;sprinkled with salt and in oven fir 20 mins.

I do that and squash between two tea towels to dry them out before cooking

No air fryer here.
@TaraRhu do you salt, rinse and pat dry before the microwave,?
Or just slice and put in microwave?

No need to salt modern aubergines- they have been selectively bred to remove the bitterness that the salting used to remove

The oven needs to go on for the moussaka, so I roast the aubergines prior to that.

BTW, I saw a recipe on WWW that used roasted aborigines in moussaka.

I can't quite imagine what is basically hot sweet aubergine jam taking the place of basic aubergines in a dish.
Ah, if you can't imagine then you will have to try it to find out.Grin You don't use a whole jar - just enough mixed into the mince to get the aubergine taste. And then get texture from potato (which doesn't need soaking, salting, patting dry, frying, roasting, etc, etc, etc)

I always roast, sometimes in the air fryer, and never salt. Works really well.
