Your foolproof cheese scone recipe pls

As per title….I’ve never been able to bake good scones and really fancy some cheese ones after being charged £1 for a small one at M&S. Any good tips or recipes for me please?

8 oz s r flour
2 oz marg or butter
pinch of salt
teaspoon of mustard
one egg
enough milk to bind the dough when mixed with the beaten egg. Save a bit to brush the tops.
4oz grated cheddar
black pepper

  1. Rub the flour into the fat - by hand or with a food processor.
  2. Add the salt and 3-4 grinds of black pepper. Add the mustard ( powdered or from a jar - either is fine). Add the grated cheese. Mix well.
  3. Beat the egg and milk. Add to the dry ingredients until you have a rollable dough - but save a bit to brush the scones.
  4. Cut out your scones and brush the tops with the reserved egg wash
  5. Cook for 12-15m at 220.
  6. Leave to cool on the baking sheet for 10m and then on a cooling rack.

And I think M and S cheese scones are rubbish and taste mainly of baking powder. I prefer Asda’s, toasted, if I’m buying.

I do similar but no egg in the dough

8oz SR flour
2oz marg
Grated cheddar, about 2oz
Parmesan/cheapy version
Mustard powder (pinch)
Nutmeg (pinch)

Milk to bind.
Never roll dough, flatten by hand, never twist with your cutters because the scones won't rise so well
Egg wash and bake at 200fan.

I would say, whatever recipe you use, put in far too much cheese - and then a bit more. I put in at least double the amount in the recipe, probably more, and whilst they don’t hold their shape - they are more slumps than scones - but they taste absolutely friffing marvellous, if I do say so myself.

I use the recipe from the Penguin cookbook.

Cranks has an excellent recipe that uses cayenne pepper. I'll see whether I can dig it out.

@SuePreemly oooh!! Parmesan in a scone - yum!! So when using a cutter just press down and lift cutter off? Probably a dumb question 🤣

I do a little wriggle with the cutter on the up-move. It helps to flour the cutter first.
And yes to copious quantities of cheese - in my case, a good, strong cheddar but parmesan would be tasty too.

I don't rub in by hand though, I do it in the food mixture. Sometimes use Red Leicester cheese, or sprinkle Parmesan on the top. Secret ingredient is paprika or cayenne or Old Bay seasoning. And double the recipe, and freeze some.

I also was told to heat the baking tray before putting the scones on to bake

Tried it but I still cannot make a really good scone. Following with interest for useful tips.

I also read somewhere about tray in oven when pre heating so will do that. Interesting how some use egg and some not. I will probably use my food processor so that the butter doesn’t get too warm from my hands as also read butter should be cold. @Scissorsisters will also add a pinch of seasoning
I’m having all ingredients delivered tomorrow evening so will be baking Thursday. Got some extra mature cathedral cheddar and already have some Parmesan at home so may grate a bit in too. I’m totally craving a scone NOW!

Add a teaspoon of marmite to the egg and beat together - adds an extra level of cheesy flavour

But I also nearly double the amount of cheese because I'm a greedy cow 😂 my kids don't usually eat cheese scones but they love these ones, that's a good testament of their deliciousness right there

My Mum's cheese scones always had cayenne in them too. They were amazing. I've never been able to find her recipe and she's been gone many years now, but I bet it was from the Cranks recipe book. I've got her copy.

I add some spring onions sometimes too which always goes down well.

I wouldn't use a food processor as it's likely to make to dough tough, you need to handle it as little as possible.

I don't use a food processor, but I rub in the butter and flour in my Kenwood Chef using the K beater. Works for pastry too.

Thanks for your tips and suggestions everyone. I used the Cranks recipe today .
Used my hands as opposed to food processor and couldn’t find my dough cutters so just used a glass. Also did half whole meal and half bread flour as one of you suggested. I do intermittent fasting and it was so hard to wait until my eating window but totally worth it!! Just had one with some butter 🤤
