Would you freeze risotto then feed it to the kids?

I made way too much risotto today - they wolfed it down so stuck the rest in the freezer. But then I had a vague feeling that perhaps reheating rice isn't a good idea...should I just bin it or will it be ok if well reheated in a week or so?

I do. I think the advice is to cool it down quickly and to make sure you reheat it thoroughly.

Well I have reheated risotto but not from frozen and fed it to my children. However I thought reheating rice was now a no-no and have therefore only given it to my dh and not the children .

I do .. It might need a bit of stock/water when re-heating because it can dry out a bit

Have reheated risotto but not from frozen - didn't know you could! Always make sure that I make it really hot when reheating though, as for some reason I thought that was important with rice.

I do. But yes, reheat very well, rice is a bugger

For some reason, the texture changes - or mine does - tends to go a bit grainy - my kids still eat it.

you can reheat rice as long as it has been cooled quickly and refridgerated/frozen rather than leaving it at room temperature. We freeze risotto for the kids although they have decided they are not that keen on rice at the moment!!.

From food standards agency:

It's true that you could get food poisoning from eating reheated rice. But it's not actually the reheating that's the problem ? it's the way the rice has been stored before reheating.

Uncooked rice can contain spores of Bacillus cereus, bacteria that can cause food poisoning. When the rice is cooked, the spores can survive. Then, if the rice is left standing at room temperature, the spores will germinate into bacteria. These bacteria will multiply and may produce toxins (poisons) that cause vomiting or diarrhoea. Reheating the rice won't get rid of these toxins.

So, the longer cooked rice is left at room temperature, the more likely it is that bacteria, or the toxins they produce, could stop the rice being safe to eat.

It's best to serve rice when it has just been cooked. If that isn't possible, cool the rice as quickly as possible (ideally within one hour) and keep it in the fridge for no more than one day until reheating.

Remember that when you reheat any food, you should always check that it's piping hot all the way through, and avoid reheating more than once.

Interesting. I left it on the side while they had their tea - maybe 20 minutes or half an hour? Now it's in the fridge. Will put it into the freezer tonight then almost certainly get cold feet in a week's time and bin it. Even though it sounds like it would be fine...I have an irrational terror of spores. Just the word makes me shudder.

Tried it once. It was quite chewy so have never repeated the experience. Have often reheated it though.

20 minutes to half an hour should be fine in this weather, juat heat it thoroughly when you do get it out, and if you defrost it first defrost it in the fridge.

Ooh, you could make arancini with it (deep-fried risotto balls with mozzarella in the middle) - I've wanted to make these for ages, but we never have any leftover risotto to make them with.
