Simple sugar syrup

(I hope it's OK to just drop ideas in like this, rather than ask questions!)

Put 200g of sugar in a pyrex jug and add boiling water up to the 300ml line. Stir vigorously for a minute or so until the sugar is all dissolved. Will keep for a week on a shelf (cover it to stop evaporation and/or flies dropping in) or ages in the fridge.

I keep this on hand all summer. Uses include:

  • Squeeze a lime or lemon into a glass. Add an equal amount of syrup. Top with still or fizzy water. A child of 6 can learn to do this with a plastic squeezer and they will think it is super-cool to make squash/pop for their Mum or friends. (Americans will probably roll their eyes at this, but in my experience most Brits have never made lemonade from scratch.)
  • 1 tablespoon of syrup and a couple of pinches of salt, diluted in water, is good for electrolyte levels when nothing else will stay in/down due to diarrhoea and/or vomiting
  • Makes margaritas so much less sour. 😉

Simple syrup is also good for drizzling onto cake layers before decorating the cake, helps keep them moist (no one likes a dry cake!)

Nooooo, it's rank on cakes, there's no need to ruin a cake with it! I went to a garden centre yesterday and there were beautiful cakes and all of them had simple syrup...so I had a scone instead 😂
