I used to love entertaining but have done precisely none since having children. Part of the problem is not having a dining table but I've decided to pull myself together and do some casual suppers in the kitchen for close friends. Gone are the days of elaborate gourmet dishes but I still want to serve up something nice. Am happy to cheat - are any of the Delia ideas any good? All tips gratefully received.

Banoffee pie. Always very popular and dead easy if you are prepared.

You need to boil a tin of condensed milk for about 3 hours. This is where the being prepared bit comes in. I normally boil 3 or 4 tins at a time so I always have a tin of ready-boiled milk in the cupboard. Then you just do a biscuit base (or cheat further and buy a ready-made pastry case), slap on the toffee (boiled milk), chop bananas over the top and cover with cream and whatever else you want.

Guests always hugely impressed but very little effort actually required. Just don't mention that it's about 1000 calories a spoonful.

I'm a big fan these days of big platters of help yourself starters.

So a huge platter or steaming mussels set out in middle of table and everyone digs in.

Big platter of bruschetta.

Big platter of italian meats, with olives, and various yummy things out of jars (peppers, artichokes hearts etc) served with a basket of foccacia and ciabatta.

Mediterranean platter, with falaffel, couscous salad, humous, olives etc

Most of these can be made ahead of time and just covered with a damp tea towel to keep them fresh until the guests arrive. The mussels take only a few minutes to cook and can be cleaned earlier in the day and then chucked into the pan at the last moment.

For deserts a favourite is to do a platter of fruits and then make a small pot of choco sauce for each person to dip into (2 bars of choco - milk or dark depending on taste - and a 10 oz pot of extra thick double cream. Chuck it all in a bowl, micro for 1 minute and then whisk like crazy until it goes into a thick sauce, pop into individual containers - tiny coffee cups are perfect for this - and then leave in fridge until needed). For really good friends I stick out a large bowl of marshmallows too

Oh I love it - love sitting and chatting while everyone gets stuck in. I think as I get older the more formal dinner party thing is starting to wear me down - in fact I almost always make my excuses if it is going to be a formal dinner party where you don't know half the folk going.

I stick to people I know will let it all hang out a bit more with people I already know and like!

DJCod · 06/04/2008 14:29

M&S sell individual pastry cases now - easy to fill with lemon curd for tarte au citroen or thick chocolate sauce. Stick em in the fridge and serve with a flourish!

The savory cases are great too for individual red onion and goats cheese tarts.

Put diced chicken breast with a splash of olive oil in large flat oven dish and brown.
Add chopped veg eg courgette, aubergine, leek, garlic, potato, olives (whatever you fancy)
Add cherry tomatoes and cubed feta, a splash of white wine and some herbs and spices (rosemary and cumin work really well)
Put back in oven until veg cooked then cover dish with raw curly kale. Put back in oven until curly kale starts to crisp.

DJCod · 06/04/2008 14:50

lol at citroen
