really good dhal recipe

HAve tried lots of recipes but have never managed to get that almost creamy texture that you get at good Indian restaurants - have tried long slow cooking, but tends to dry out on me.

I want this to so bumping. In fact, I'd like lots of good Indian recipes. All I want to eat right now is hot spicy food but as I can't make any, I'm left to pine.

Nigel slater has a good one, but it contains heart attack inducing quantities of butter. Still want it?

Madhur Jaffre has lots of dahl recipes that always turn out well, I lent her book to afriend though so can't copy the recipe here!

Sometimes a blob of greek yoghurt stirred in at the end gives it a nice creamy texture.

Have used red lentils most often, tried the yellow ones but they were a bit lumpy.

I've tried red lentils. Is that wrong?

Typed out anyway as have to head out soon!

8oz yellow lentils
1/2tsp turmeric
75g butter
1/2tsp cumin seeds
1 med onion, sliced
2 sliced cloves garlic
1 small red or green chilli
1 tbsp coriander leaves, chopped

Rince lentils, put into pan with turmeric, salt and 1 1/4pints water
Boil and stir, simmer 25m. Should be easy to squash

Make spiced butter by heating butter in shallow pan, add cumin onion and garlic and cook until nutty golden brown. Takes 20mins. Dont burn
Add chilli for final 3 mins
When lentils have absorbed all water, beat with wooden spoon until smooth, then put in dish and pour spiced butter over top then scatter over coriander leaves.

I promise you, it's lovely... I made it with less butter and it was still gorgeous. I love daal, me!

no pre-soaking needed. Look for toovar daal in your local asian supermarket.
