Can we talk about coleslaw

I love proper coleslaw. I'm a fairly competent cook, but cannot get this right.

My friend makes the most delicious one, but says she just chucks stuff in.

Mine is always to mayo like, or to runny.

What's the perfect recipe?

I suspect this might be like lasagna and have a million versions containing olives and Stilton but just pure traditional coleslaw. Oh and perhaps other simple bbq type accompaniments.

I make a basic pasta. Pasta, cooked, pesto, feta, diced cherry tomatoes and pine nuts. Done.

If I have time, I salt the cabbage to draw out excess water, then rinse the salt out and dry on kitchen towel. It does make a difference. Also add mayo a little at a time and spend time stirring so that it is just coated.
I add spring onions as well as carrot to mine, and sometimes sweetcorn.

Macerate onions in acid (vinegar), leave for a bit. Dressing super simple- mayo, oil, vinegar, mustard and plenty of salt and pepper.

Use less mayo than you think and leave it overnight.

Half mayo half yoghurt is good.

I like it fresh onions, fresh carrots and fresh white cabbage. All shredded with enough good quality mayo to bind it and just pepper ground on top. No salt needed.

Grate carrots, chop cabbage and onion. Half mayo to full fat Greek yoghurt. Salt and pepper. Lovely!

Shredded white cabbage
Grated carrot
A smidge of red onion
The veg should fill a salad bowl
2 tbs hellmans, 8 twists of black pepper, juice of half a lemon, scant tsp of white wine vinegar
Work the mayo mix in with your hands
Improves overnight

I use a 50:50 mix of mayo and philadelphia, cut all the veg really thin. I prefer to use red onions & red cabbage instead of the boring white kind

I started making coleslaw when I was on a keto diet (not now) so I've used both full and lighter fat mayonnaise and any cruchy veg I have at hand. I would think cabbage and carrot is the basic, and anything else is added to taste and just what you have.

You can add a little yoghurt rather than all mayonnaise as an alternative too- without changing the taste. These are some things I've added, again depending what I have on hand- red and/or green cabbage, celery, radishes, celeriac, purple onion and carrot. When I was on keto, I'd add seeds like sunflower or flaked almonds.

Sliced cabbage in a bowl, sprinkle with salt and sit for a bit (I don't rinse the salt off) Add sliced onions and a couple of splashes of lemon juice and mix through. Grate in carrot. Add mayo and Greek yogurt in equal quantities until it's the consistency you like.

I use red cabbage, red onion, carrot and coriander.
i mix mayo with homemade dressing and a bit of yoghurt.
The secret is the ratio of mayo to veg, you always need less than you think.

My only contribution is that I was very tickled to receive an email from a man named Boleslaw today. I absolutely took it at face value and read it in my head with a roughly estimated Polish (?) pronunciation and it was only when I checked back on the spelling to reply I realised...coleslaw with a B.

It was a slow day

Use less mayo than you think you will need. Lots of stirring. I use a teaspoon of chipotle paste in mine yummy

Finely sliced white cabbage (not with a mandolin - cut the end of my finger off that way!), grated carrot, finely sliced brown onion. Sauce made of 50% mayo, 50% Greek yoghurt, the juice of half to one lemon to taste. Maybe slightly more mayo to yoghurt and less lemon juice if you like it creamier, less mayo to yoghurt and more lemon juice if you like it sharper.

I like shredded red cabbage , red onion and grated carrot , I think add as much mayonnaise as you think , then a bit more ( contrary to above )
Sometimes I add a spoonful of grain mustard
At Christmas I add grated raw beetroot and dried cranberries

Do you do the same with the carrot? I find that is quite wet.

Half a white cabbage finely shredded, two carrots grated, 2 pink lady apples finely chopped, bunch of spring onions, sprinkle of sultanas. Mix with just enough mayo to coat. Quite sweet, but I love it!

@Sunshineandrainbow I don't salt the carrot, I think a little moisture is good to loosen the mayo. I guess you could dry it on kitchen towel if you thought it was too wet but I don't think carrot would benefit from being salted.

Grated cabbage, grated carrot, chopped red capsicum, chopped spring onion grated apple, splash of white wine vinegar, mayo and half a teaspoon of Dijon mustard. Sometimes I omit the onion and throw in a handful of sultanas or nuts instead.

Salt and pepper
One tablespoon mayo
