Salads that last for days in the fridge - ideas?

I like making big quantities of salads to last me the week. They need to be fairly 'dry' to last and not get soggy. I make a jar of dressing and dress just before eating, adding whatever protein I fancy too.

I tend to make the same thing week after week then get bored and move on!l I'll share some recent salads I've eaten (for weeks at a time) and it'd be great to hear yours!

Thai style coleslaw with peanut dressing - lasts for days in the fridge if you dry the coriander well etc.
Red cabbage sliced v thin
Red pepper diced
Carrot grated
Spring onion sliced thinly
Chilli (you could leave this out or add to the dressing)
Coriander finely chopped

Dressing: peanut butter, lime juice, honey, rice wine vinegar, soy sauce, sesame oil, garlic, ginger, chilli (sauce or flakes)

To serve: dress and add fresh mango and protein

Broccoli salad - lasts for days in the fridge.
Raw broccoli sliced very small
Red pepper diced
Red onion diced

Dressing: tahini, garlic, lemon juice, salt, pepper, splash of water and/or olive oil

To serve: dress at least an hour before serving (softens the broccoli). Add toasted hazelnuts, dried cranberries and protein.

Puy lentils (from a pouch) with roast root vegetables (carrot, radish, beetroot, onion) or Mediterranean vegetables (peppers, aubergine, courgette, onion). Finely chopped parsley or dill. Lemony dressing kept separate - add salmon or goats cheese/feta to finish. Microwaves nicely too.

Greek salad lasts a few days in the fridge. I usually add chickpeas.

Roast cauliflower and roast chickpeas, with plenty of paprika and cumin. Add chopped parsley and finely sliced celery once cold. A tahini dressing works well, or a simple vinaigrette plus a big spoon of plain yoghurt on the side.

Cucumber, edamame beans, coriander and spring onion. Soy sauce, sesame oil and rice wine vinegar dressing. It’s good for a few days even dressed.

Re Niçoise salad, yes the leaves go manky. I do a base of tomato, cucumber, black olives, green beans (cooked al dente and cooled fast) and baby potatoes. Vinaigrette and boiled eggs kept separate (last longer with shells on). Then finish with salmon or tuna.

I do this with a kidney bean salad and absolutely love having a big bowl of it for lunch or as a snack.

tin of red kidney beans
diced avocado
2/3 tomatoes diced
red onion chopped
2 green chillies - finely chopped
Handful of coriander
juice of 2 or 3 limes, zest of 1
olive oil

Mix it all together, order doesn’t matter. It tastes even better the second day!

Why don't supermarkets sell grated carrot? I have a trapped nerve so grating things is not my friend and very painful. And I love grated carrot.

@Fraaahnces : thanks for the paper towel tip, makes lots of sense (like the paper towel on eg bag of spinach) but I hadn’t thought of doing it for other types of containers

Chilli in any form (hot sauce, flakes, chopped fresh) in the dressing zings up every salad.

And as everything else in there is healthy, don't be afraid to add some sugar.

You're right. I just thought of another dressing for the first cokeslawy salad I wrote down.

3tbs rice wine vinegar
3tbs soy sauce
2ts fish sauce
Lime juice - 2?!
1tbs sugar
1tbs garlic and ginger paste
1tbs sesame oil
Fresh chopped chilli/chill flakes
