What to do with this delicious green sauce

I bought a green chutney at a market at the weekend. It’s delicious but quite hot. The lady suggested that I could use it as a
marinade. Any ideas what would go well with it?

I’d try marinating chicken thighs in it and then bbq or grill them

You could try mixing a dollop with yogurt to make a less fiery dipping/drizzling sauce - this could be good with salmon fillets or roast aubergine or chickpeas

A little smear of it with bbq lamb or steak would be amazing I suspect

It's mint and coriander chutney. It's something you'd typically put on Indian snack foods as a condiment, so in the UK, things like bhajis/samosas. The thing I most use it on is vada pav - spicy potato patties on a bun.

You don't have to deep fat fry them. You could make potato cakes, with the same spices, and pan fry leaving off the batter. And they would be delicious. Try with tamarind chutney too, which you can get a bigger supermarkets that have an Asian section (Maggi does one that is nice).

Vada Pav

Vada Pav is Mumbai's most popular street food! Spicy potato filling is sandwiched between burger buns and layered with spicy chutney!

Agree with all of this especially the tamarind chutney which is my favourite. The green chutney and tamarind chutney are also used in different types of chaat dishes which are all delicious.

Alternatively, if you want to cook with it, try it as a substitute for coriander chutney in this chicken curry.

I think it would go lovely in a potato salad with a mix of yoghurt and mayo.

BlackForestCake · 15/05/2024 09:26

Use it in a sandwich (as a layer, not on its own!)

Wizadora2 · 15/05/2024 21:36

Yes like other posters have said, it can be mixed with yogurt and used as raita to accompany biryani/pulao.

You can also mixed it with a bit of yogurt and marinade boneless chicken breast pieces, then cook under the grill. Search for green chicken recipes.

@Wizadora2 that looks incredible! Need to try it 👍

soupfiend · 15/05/2024 22:15

Oh god that looks lovely. Id put it on anything and everything.

What about marinating some paneer in it?

HollywoodTease · 15/05/2024 22:20

I'd brush it onto firm white fish, chunky cod or maybe monkfish or even shark. Then pan fry it in paneer and serve it on a bed of basmati and oven-roasted veg.

If it’s hot you can mix it with yoghurt and either use that as a sauce or as a marinade for chicken thighs or lamb for the BBQ. You could always add more oil and paste in on meats for grilling. I’ve done this with very hot Thai red paste and it was delicious on salmon on the bbq.

A higher spiced coronation chicken may also work.
