Coleslaw? Anyone make their own?

Seeing as I have a white cabbage, loads of carrots and I bought too much mayonnaise I thpought I'd make some to go with tonight's southern fried (baked) chicken.
Any tips or recipes? Do I need an onion?

If you have one it will give it a bit more bite. I put a splash of tabasco in mine too and use a combination of yoghurt and mayo.

I also use yoghurt and mayo but if you don't have any add mayo as you need it. Lots of black pepper,have been known to add silverskin onions as an alternative.

yes
chop some white cabbage
chop some red cabbage
grate some carrot (if you like - not necessary, I don't think I usually add carrot)
grate an apple
mix together with the juice of at least a half a squeezed lemon
half yoghurt and half mayo here too. ou could also add some sultanas if you like. Yummy yummy.

I never use onion because I don't like it raw

Thanks. Only have strawberry yoghurt here (don't think that would be pleasant!)
Don't have tabasco either. Chilli powder and flakes (will take roof of mouth off tho) only here.

Iwould do just like DPH. Remember to cut/shred very finely.

Yes, shred/slice finely- the finer the better and use white onions too

I wouldn't add chilli personally. Also, I would suggest you make it in advance and put it in the fridge for a while before serving.

sweet coleslaw

1 head cabbage
2-4 carrots
1 cup mayonnaise
2 tablespoons vinegar
2 tablespoons sugar
salt and pepper to taste if you desire

Shred cabbage and carrots into a bowl.

Mix mayonnaise, vinegar and sugar in a separate bowl; blending well.

Pour over shredded vegetables and stir to coat. S&P to taste as well

4Chill.

Amounts of dressing ingredients can be adjusted to suit taste but always use the same amount of vinegar as sugar.

this is very similar recipe to what my dad makes... i'm not big on coleslaw in genral but this recipe is simple and nice.

I use red cabbage, carrot, mayo and sultanas. Yum!

Ok have done carrots/cabbage/red onion (only one I have left) mayo and put in fridge. Just have to wait and see.
Oh yeah black pepper.

Twas all finely shredded. Cabbage slightly thicker fine shred (want some crunch to it)

I use a Good Housekeeping recipe - white cabbage, carrot, onion, celery, mayo, parsley. I added a bit of dijon because the mayo was Hellmans or something else dull.

Works with red cabbage too, though.

It does not work with special anchovy mayo. Though. In case anyone was wondering.

Does anyone make 'winter slaw'? I've had some lately, and really liked it ... seems to have peas in it?

i too add mustard to the mayo / salad cream / yog mix. have also put apple and pineapple chunks in as well. The sweet really works with the savoury, mustard and the black pepper...mmmm

lemon juice is nice too - a much fresher taste than just mayo, esp if you don't have yogurt. I also add a good handful of toasted seeds (pumpkin, sunflower, sesame), maybe some raisins, and plenty of chopped parsley.
