Flapjacks - what am I doing wrong?

Why do my flapjacks always come out as a soggy, sticky mess? It's impossible to pick them up with fingers & they have to be eaten with a spoon.

I've tried using different recipes, I weigh the ingredients carefully, I've tried flapjacks made with golden syrup and flapjacks made with honey. I use the size of tin mentioned in the recipe and cook them until they're golden brown.

I'm going to have one last try before I give up forever, so any advice or foolproof recipe recommendations are welcomed.

Squash them hard all over with the flat times of a fork (though potato masher sounds like a fine plan) at two points:

  • after putting them into the tin
  • immediately after taking the baked flapjacks out of the oven

Also, slightly less good quality oats are better. Big nuttier flakes = less binding. Tesco’s cheapest ?Stockwell? brand works very well, or mix half half with their Scottish porridge oats.

Add a tablespoon of flour to the ingredients.

COndensed milk is the key, as in Soup Dragon's recipe above. Used to buy lovely chewy ones from M&S and looked at the ingredients to see condensed milk, so started using it, otherwise used to nearly break my teeth on my homemade ones.

No sugar needed. The sweetened condensed milk and syrup is plenty.

The original had extra sugar and was so sweet you could feel your teeth crumbling as you ate it. I reduced the sugar over several attempts and ended up using none at all.

It started out wanting something like 300g of sugar which was ridiculous. I whittled it down to 100g and then cut it out completely.

Condensed milk is the game changer.

Soupdragons recipe is completely foolproof. Nothing beats it.

My recipe has flour in it too. It makes all the difference, and keeps them stable.
