Can I freeze double cream to add to sauces?

I rarely use cream in cooking (always on a dietConfused) but could occasionally do with a splash for Diane sauce or creamy pasta dishes - i literally only need the equivalent of an ice cube or two.
Back in the 80's my mum used to buy it in Bejams but I haven't seen it for a long time - does anyone know of you can buy it or freeze your own?

Yes whip it up, greaseproof paper on trays, dollop tablespoons onto sheet freeze and store.

Yes, my mum used to buy frozen whipped cream dollops at Iceland!

But you can do it yourself if no one does that anymore.

Do you then just spoon out whatever amount you need? Is it easy to take out with spoon?

I tried freezing double cream, it came out rubbish when I tried (separated and weird) I managed to whip it up to look something like cream, but an experiment I wouldn't repeat.

I throw out loads of double cream I had no idea you could freeze it. Why do some of you whip it first?

No if you need smaller quantities I’d freeze in an ice cube tray. I regularly use a whole pot in things like potato dauphinois or tartiflette.

I remember those frozen logs, but haven't seen them for years.
Love to know where to buy them.

I've always got a pot of creme fraiche in the fridge. Tastes similar to cream, & keeps for ages even after opening - ignore the date on the pot.

Iceland used to sell frozen cream. We use crème fraiche too.

It's fine to freeze if using in cooking afterwards, it can't be whipped though after thawing. Whipping it first is something I'd do if I wanted to use it on desserts for example, then the whipped blob thaws into something more edible!
