Gluten free, vegetarian - what can I eat?

Just that really. Maybe gluten free is the wrong phrase and it should say low gluten? I’ve noticed that when I eat lots of gluten I really feel awful: stomach ache, bloating, tiredness, so have decided to try and cut out as much gluten as possible to see if it helps.

You might benefit from vegetarian low FODMAP foods for a while, so things like a vegetable stew/ratatouille without onions or garlic, served up with white rice or gluten free pasta, and maybe a little bit of grated hard cheese or cottage cheese.

(No cheese if you go for the two week hardcore exclusion phase which cuts out lactose as well.)

I honestly have days like today when I’ve eaten virtually nothing, and tomorrow will be white rice and a couple of tinned tomatoes and olives and grated carrot.

Stir fries with rice noodles.
Vegetable pasta dishes with lentil pasta
Vegetable curries
Jacket potatoes with beans
Veg burgers in gluten free brioche bun with salad
Veg sausage with mashed potatoes and mushy peas
Spanish omelette with loads of veg including potatoes diced.

All our meals are GF vegetarian.
This week we’re having:

Egg fried rice
Aloo gobi traybake realfood.tesco.com/recipes/aloo-gobi-traybake.html
Baked sweet potatoes with chilli beans, guacamole, cheese etc…
Leek risotto
Thai chickpea curry and jasmine rice

Worth noting that if you want to be tested for coeliac disease you will need to have been eating gluten for 6 weeks to make sure the test is accurate. I only mention this as reintroducing it can be a lot harder than testing before eliminating.

I'm not GF or veggie but do cook a lot of GF and veggie stuff for myself & friends/family

I'd probably do something like

Veggie burrito bowls (basically a bowl of rice with whatever toppings you like. The toppings are lightly fried in a packet of fajita seasoning. We usually do any combo of carrots, chickpeas, baby corn, edamame, peppers. Then add whatever extras onto you fancy like salsa, sour cream, avocado slices)

Curries, especially paneer curry

Tofu dishes, tofu works best if its a dish that was always intended to have tofu in it. Not a dish that normally has meat but someone tries to make it veggie by adding tofu instead

Bean dishes. We love a veggie "puttanesca" which is basically beans such as chickpeas or cannelinni or similar fried with a tin of tomatoes, capers, olives and herbs

Shakshuka but without the bread. I love bread with my shakshuka but it's still nice without it, or maybe with GF bread instead!

Veggie stir fries with rice

Ramen with either rice noodles or no noodles

I don't know if you have e a Whole Foods near you but I just bought some incredible gluten free bread, made of grains and seeds.
