Cheesecake recipe

Dd has requested a cheesecake for her birthday cake, after having been wowed with a passion fruit one my mum bought her from Waitrose.

I was thinking passion fruit might be a bit tricky, so maybe raspberry. But I am very open to suggestions.

Does anyone have a really good, simple recipe? Prefer one that doesn’t use gelatine, if possible.

Have a look at janes patisserie online she has loads of cheesecake recipes. Easy and taste good

I love her basic recipes, not so fussed on the ones where you add a mountain of biscuits and crap on top.

Yes a baked cheesecake is a very different beast to a whipped cheesecake.

White chocolate and raspberries make a lovely combination in a cheese cake. I have used this recipe from a gluten free site but there are plenty of other similar recipes out there.

Another vote for white choc and raspberry, I use a Philadelphia cream cheese recipe.

This one looks a bit fancy and has more unusual ingredients (cardamom), but not difficult to make. It might depend on your dd's age and tastes though, but if she's already up for passion fruit....

A baked cheesecake is simple and delicious.

Basically choose a base, I like ginger nuts myself though digestive are classic, crush, mix with melted butter and press into the 10 inch spring form pan you have lined the bottom with grease proof paper and greased the side, bake for 4-5 minutes on 180/gas mark 4

Meanwhile mix 4 eggs, 150g caster sugar, 400g cream cheese, zest and juice of 1-2 lemons, 2 tsp lemon extract until smooth then add 200g fresh raspberries. Add mixture to the pan and bake for 40 minutes (may need up to 10 minutes longer depending on oven, should be set but a slight wobble) meanwhile take a pot of sour cream, 50g sugar and a double shot limoncello and mix, pour the mixture over the cheesecake and return to the oven for 6-8 minutes until set. Place into the fridge immediately for 3+ hours.

You can use the same base recipe but change flavours easily

Unfortunately I missed out on eating the original cheesecake, but a bit of questioning and googling (my mum had no recollection of it, and it turns out it was several weeks ago) has revealed it was frozen, made by the English cheesecake company, was mango and passion fruit, and was actually vegan.

I’m not confident making a vegan one, but I think unbaked will be more similar in texture, maybe? I’ve never eaten vegan cheesecake myself.

I really like the sound of raspberry and white chocolate, so I think I will go with one of those - though there is a mango one on that Jane’s site, so maybe I could give that a try.

I don’t really like digestive biscuits, so might try something different as per previous suggestion, wonder if malted milks would work?

Haven't tried malted milk as a base but don't see why it wouldn't work. Ginger nuts are another option, they do work well as a base (as long as the ginger works with your other flavours!)

This is my go to basic cheesecake recipe, you can use different biscuits and top with whatever you like, I've used home made ganache, lemon curd, I think tiptree do a passion fruit curd which would work. I think the original was adapted from a Gordon Ramsay recipe but I have been using it so long I can't be sure.
It doesn't say how much vanilla I usually use a small tsp of vanilla paste
