Easy & budget friendly (healthy) dinners please (bonus points for recipes for "fussy" eaters!).

Also, tips on encouraging 10yo adhder to try new foods?

Anything you can assemble yourself at the table: fajitas, tacos, kebabs in pittas (something about food on a skewer which is exciting to small children!)
Make your own pizza
Pasta bake
Jacket potatoes with a variety of toppings
Anything contained in a giant Yorkshire pudding
Veggie chilli

Tuna meatballs recipes.lidl.co.uk/recipes/tuna-meatball-spaghetti - very easy, but grating the (hidden) courgette is a bit of a faff. The dc love this dish though, so it’s worth it!

Get them a recipe book or get them on pinterest or similar to search for recipes they'd like to try. Let them choose a few and take the lead on making them for everyone for dinner.

If you like a noodle soup, they can be the easiest thing in the world and so quick, too. Also strangely filling!

  • For the base broth you can use a simple stock or miso paste + boiling water
  • Veg - chuck in some sweetcorn or mini sweetcorns or sugar snap beans or edamame
  • Protein - ready-cooked meat or tofu
  • Your fave noodles
  • Spinkle some sesame seeds on top eh voila!
  • And to make it spicy, you can add chillies or chilli flakes or give it a curry vibe by adding a bit of milk (coconut milk if you have it) and some turmeric/cumin

My kids love it, too. Such an easy meal and so many ways to mix it up and add/takeaway things for fussy eaters. A bit of extra time and you can cook the protein and/or different veg in a pan

My son uses Simply Cook. They send you the herbs, spices, rubs etc and you buy the fresh food. The recipes are easy to cook and tasty.

Maybe you could get him to choose and cook them.
