Pink Chinese chicken sandwich filler

Years ago when I was at college we had a little sandwich stop nearby that did the most amazing sandwich filler of "Chinese" chicken in a lurid pink mayo - it wasn't authentic obvs. Grin BUT it was bloody lovely - filled to the brim in a brown roll with cheap spread and weird random salad (carrots, cabbage, stinging raw onion and a lonesome tomato) This is when I lived in Yorkshire / Co. Durham so maybe it's just a regional thing??

Anyway, I've recently remember how much I loved it but looking on Google only brings me 1kg catering / trade tubs of it. There doesn't seem to be a recipe I can steal either! Any ideas? Many thanks!

I remember this stuff! They used to sell it in a sandwich shop in my home town (in NI). Also chicken tikka and bbq chicken, all in thick, mayonnaise-based sauces!

I have no idea if you still get this anywhere. Haven't seen it for years.

Scotland here. All the baguette shops have this. Either in the sauce or just the pink chicken

Someone mentioned this in a FB group that I’m in the other week. A few people have tried to recreate it by mixing some of the flava it Chinese seasoning packets that you can get in Tesco with mayo and cooked chicken. I tried it, it was nice though I’m sure it’s not quite the same.

Marinate chicken in This and cook. Allow it to cool and mix with mayo and a blob of ketchup. I quite like a tiny bit of mango chutney added too.

@SendNoods - I am definitely going to try this! Thank you. It was such a distinctive taste, almost aniseedy? I'm guessing it was mass produced as well which is always so hard to recreate!

@ohsoverrrrytired yes definitely mass produced, I don't think you'll be able to get an exact match unfortunately but that one is decent enough for me, I'll sometimes add a bit of sweet chilli sauce. You can fiddle around and add things for your taste.

I also discovered this when I was at University of Teeside, Middlesbrough, the uni had a deli that served the pink chinese chicken filling in a soft roll with lettuce and cucumber - I was addicted to them!!

I finally found how to recreate the filling, buy this marinade from Taste Sensation and mix it with mayo(following their instructions) and pre cooked chicken slices from the supermarket (cut into little bits):
