I’m going to make lasagne for the first time ever - any tips or tricks?

I do cook, honest guv, but no-one but me has had any interest in lasagne and I can’t be bothered making it for just me! But youngest DS has asked to try it so I now need to make an Epic Lasagne so he likes it and I have an excuse to make it fairly often from now on.

Help me Obi-Wan Mumsnet, you’re my only hope.

Does she do any cooking of her own?

Yes, constantly. She swears nothing taste the same outside of Italy and that they keep all their best ingredients and export only second best.

I really wanted her to try one of our homemade meatballs but didn’t push it. 🤣

I make up a massive batch of ragu at the beginning of the pay month which I portion and freeze. We work shifts and can all be in different places so meal planning is a bit of an operation. This makes knocking up a lasagne much less bothersome as all I need to make on the day is the cheese sauce :)

I just finished making it. <exhausted>

I didn’t have all the ingredients yesterday so Boy has to wait until tomorrow to try it. It took me 5 bastarding hours! You were right when you said make a lot of bechamel sauce, I could probably have done with a smidge more even though I made lots!

I'm thinking there’s no way it’s going to be nice enough for the amount of time I spent on it. But if DS likes it of course I’ll suffer every month and make him it!

I thought the portion of ragu would leave me with leftovers but it didn’t so I’ll double it to make things easier next time. If there is one. 😂

Thank you so much for all the advice! 😘

Omg well done! It really can take hours. And all the pans and spoons. You’ll have plenty left over!

Next time make the ragu well ahead of time. You can make it and freeze it. Or make it a day or so in advance and stick it in the fridge. It’s so much easier just spooning it in ready made. But I only remember to do that occasionally.

Great job!! It does get easier!

Make the ragu in a slow cooker, lots of veg. Assemble the next day, make if fairly sloppy because the pasta will soak up loads of liquid. Be generous with cheese. Allow the finished dish to sit for at least an hour (but overnight is better)before cooking. NEVER mention jars, these should be rinsed and disposed of while no one is home. I am famed for my home made lasagne, all daughters and DILs sneer at the very idea of a jar because mine is so superior😂😂😂
