Very quick meal Ideas for teen sports night?

DD's sports club has changed time and so she will need to leave at 6:15 ish and get back just after 9.

I don't get back from work till after 6 so ideally I'm also looking for meals that DH and her can cook, then I can reheat a portion later.

When the club was earlier, it used to be pasta night and we'd all eat together afterwards. I think pasta can be quite heavy to go and do an evening of sport on though. At the same time, I don't want to have to stop at the chippy on the way home because she's starving.

So far I can think of stir fry dishes, fajitas & omelettes. What else could we have?

Do you have an air fryer?
My favourite easy go to is chicken thighs marinated in whatever you like in the air fryer, with rice and either veg or salad whatever you fancy

Do you all need to eat the same? Can she have egg/beans on toast etc before club whilst the parent who doesn't take her to club, cooks for the two of you?

Do you have a slow cooker?

We often do taco meat in slow cooker, get it started in the morning. Then when we get home just pile into a taco and add salsa, cheese, tomatoes, etc.

Slow cooker curry also works well. Just boil rice.

Homemade burgers in nice buns are good for feeding people at different times, since they just cook the number they want at any time. Can make them in batches and freeze them as well.
Pizza pinwheels are also good - mine used to eat these in the car when we seemed to be out all evening. I used to make pizza dough in the bread machine rather than using the packet mix.
Or do as pp suggested - dd has something easy on toast before she goes and you and dh eat while she is at her sport.

Burgers are a good shout and I've just thought of fish finger sandwiches/wraps. Toasted sandwiches a good thought too. Sounds like swapping pasta for bread is a way forward Grin. Probably need to balance the protein and carbs, and add some salad, but it should be doable.

Creamy chicken in the slow cooker.

Chicken goujons, thighs or breasts, it doesn't matter.
Sliced mushrooms.
Chopped onion (I use frozen).
1 tub creme fraiche.
1 tin of condensed mushroom soup.

OPtional sliced leeks or sweetcorn or peas.

Put it all in the slow cooker (I have a small slow cooker for a larger one you might need to increase the soup).

Serve with rice or fried potatoes.

I live alone so I make this one day and then the next I put the leftovers in a foil container and add a pastry lid. I put that in the freezer for a quick meal another time.

I'd focus less on stuff that's quick/easy to prepare fresh and make her up some 'ready meals' - something you can cook and plate up in tupperware/takeaway containers and freeze or keep in the fridge for a few days. You can do this with rice dishes, such as chilli or the chicken and rice mentioned,. or pasta meals, egg muffin cups, soup (to serve with bread or a cheese toastie) etc. Most things can be frozen and re-heated and taste just as good.

Or even just making a bit more the night before and she has the same meal on the night she has the event.

Can she load up at lunch time and just snack at 6 o'clock. Then have some protein after the sport.

Agree with all these but 100% second the air fryer so that everyone can just eat more or less when they like. eg

Fishcakes - I'll cook some veg and potatoes earlier and everyone just microwaves that while their fishcake cooks.

Tacos - I (in your case DH and DD) make the filling and set out toppings, then we just shove the taco shells in the airfryer as we need them.

Chicken burgers - we buy those crumbed chicken steaks (like posh nuggets) from waitrose. One makes a really nice burger and cooks in my Ninja in 12 minutes.

Fish finger wraps - as above.

Also, for DS, I quite often DO do pasta but he'll have half before his activity, and half after which seems to work quite well.

I also totally second the baked chicken thighs - they reheat well, and at this time of year we do them with just salad and new potatoes.
