Cornflake cakes

My mother used to make cornflake cakes that used a sort of toffee to stick the cornflakes together rather than chocolate. They were delicious, but nobody in the family (including my mother!) can remember how it was done. My brother tried to make some this morning with his ds, but has ended up with solid lumps of cornflakes stuck together with toffee, not the crumbly flaky things we remember. Does anyone know how to make them?

i read somewhere to use mars bars. i thinkit was a nigella recipie, so i use tesco own make marsbars or it gets to expensive!

sorry, their still too chocolaty for what you want though!

We used to have cornflake tart - pastry then jam then cornflakes. I know people put golden syrup as well as chocolate in crispy cakes - perhaps melted together with butter (i make ginger biscuits with that).

So I had a go making toffee and mixing cornflakes into it and dumping spoonfuls on greaseproof paper. i appear to have invented a new sort of breakfast cereal -I think I'll call it..hang on... yes, I've got it.. Frosties!

You can also melt marshmallows into the syrup and butter. This makes them a bit more like toffee. I do this with rice crispies and use dairy free spread to make them for my dairy allergic dd.

Sugar, butter, cocoa and golden syrup melted in a pan together.

I'm not sure of quantities but could find out for you.

aha I have this one

[rummages]

4oz toffees
2oz marshmallows
4oz marg
1 level tbsp honey
6oz cornflakes/rice crispies

Melt toffees, marshmallows, marg & honey
stir in flakes & crispies
press into greased swiss roll tin & chill

i'm going to try that one out tomorrow, mrs b. i tried to make some cornflake cakes with the flapjack recipe but just ended up with burnt black cornflakes.

I made some cornflake cakes yesterday after getting recipe ideas off here and the web.
Didn't follow any measurements though

Melted around 300g of chocolate with a big blob of butter, added a gloop of golden syrup.
A sprinkling of rolled oats and a good shaking of cornflakes into a bowl.
Mix well altogether and put in to cake cases.

I made 12 in muffin cases

the key thing is flapjacks need cooking, crispy / cornflake cakes don't!

I just melt a couple of mars bars and stir in the cereal till it's th eright consistency, then either dollop in papaer cases or press into a tin

but then I'm lazy

Mrs Badger..never knew that about toffees..that you could actually use them after they where all left in the tin at christmas time...so have just used your recipe and they wehre so so so fab...omg..just put on bout half a stone!!!!..but hey thankyou it was worth it

Bag of Tesco Marshmallows, blob of marg., one mars bar, melt together in a large pan then add rice crispies. Quickly put in bar pans (large pampered chef bar pan is good, doesn't stick). Press down using knife dipped in cold water. Leave to set or put in fridge. Done.
