Banana bread recipe please!

I've googled this and I don't have half the ingredients like vanilla, wholewheat flour, maple syrup etc etc!

I have got plain & self raising flour, brown sugar, eggs, pecans, bananas, mixed dried fruit, butter and possibly some baking powder/bicarb but can't be sure about it!

Anyone got a good recipe I can follow?

I have this recipe for banana and coconut muffins but its basically a banana bread recipe I adapted... give me a sec and will dig up a plain one for you

this Nigella one is good, you could miss out the vanilla and use what fruit and nuts you have to hand. Although you do need bicarb and baking powder

Easy Fairtrade Banana Bread Recipe

175g. Self-raising flour

125g. Butter, melted

150g. Sugar (Fairtrade)

2 large eggs

4 small very ripe bananas (about 300g weighed without skin) mashed (Fairtrade)

1 teaspoon real vanilla extract

Preheat the oven to about 150 degrees C for a fan oven (a little more for a conventional oven.)

Add the sugar to the melted butter and mix. Then beat in the eggs then the mashed bananas and vanilla extract.

Add the flour gradually.

This amount will fill approximately 12 large muffins cases and will take about 15-20 minutes to cook.

If you want to make more, smaller muffins decrease the cooking time

If you want to make one large cake increase the cooking time to approximately 40 ?50 minutes depending on the size of the tin.

Don?t worry about the times too much. It is easy to check. Test with a toothpick or skewer. If the cake is done the skewer will come out clean.

You can also tell by pressing the surface carefully, the cake will feel springy when it is cooked.

The fun thing about cooking is learning to experiment. This recipe can easily be adapted by adding any of the following:

  • Fairtrade chocolate for a special treat (chopped into small chunks) or place one square in the middle of each muffin sized cake before cooking.
  • A little Fairtrade cocoa powder
  • Walnuts (if nuts are not a problem)
  • Sultanas - try soaking them in Fairtrade or local fruit juice for a few hours to make them extra juicy and yummy.

hi
i just make a normal cake 4X4X4 or 8X8X8 etc and put in the banana and other stuff instead of one of the eggs or extra milk
it always seems to work .. if i've got wholewheat it goes in, if not normal self-raising ..it depends what's in the cupboard ..

if you're unsure about the bicarb just use self-raising instead of plain, and in my crap baking experience it always rises better in a loaf tin

ps if you ever put pine nuts in they are completely fab, also you can chop an apple up extra small, the sweetness means you can add less sugar and there's moisture in there too

chuck in all in a mix for quite a long time for the air and cook for about 35 to 40

try recipezaar its pretty good one though I would probably leave out most of the salt.

Banana bread

Ingredients

2 cups self-raising flour
3/4 cup caster sugar
½ cup milk
1 egg
2 tablespoons melted butter
2- 3 medium sized freckled bananas (best flavour)
1 teaspoon vanilla extract

pre heat oven to 350F
Lightly grease 9 x 5 loaf pan.

In a medium bowl place the banana and mash it with a fork, add the flour, sugar, milk, egg, butter, and vanilla and mix well, the batter will be quite thick and lumpy ( for a smoother consistency feel free to use an electric mixer though I mixed it by hand)

Pour batter into prepared loaf pan.

Bake in preheated oven for 60-65 minutes until a toothpick inserted into center of loaf comes out clean. (depends on your oven really)

Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

mostly I make muffins as its easier to divide up and parcel out to everyone... hope that helps

inspired by your op, paddlechick, i also googled some recipes (too impatient to wait for replies) and have just put into the oven my frst ever banana loaf.
hope it works!

thanks everyone, we've been out most of the day so haven't tried anything yet.
I'll report back on my efforts. Until now I've cooked but never baked!

I do a banana loaf similar to the one James has written up - but I add a tablespoon of natural or greek yogurt or even a flavoured strawberry or reassberry has gone into the mixture. This makes the banana loaf moist. Also add an onze of sultanans.

Bake in a loaf tin on gas 3 for 70-80 mins. Keeps in a tin very well and after a week the loaf flavour gets bananary even more - if the laof actually last that long!

I do sometimes cut the loaf up into individual slices and pop in freezer bags then pull out and pop in pack lunches.

bella- thank you you have made my day.. if you look on my blog there is a bit along the right hand side that says "my recipes" click on it and it will give you all the recipes I have posted on my blog! though I have tons more that I haven't photographed or written the recipe for I tend to collect them then go my own way and make my own recipes up from whatever I have in cookbooks or on recipezaar or other such sites....

okay! standby! it's taken nearly a week but we are ready to try our first banana bread cake this afternoon.

slight panic this morning when MN was down so I couldn't get recipe

intend to try James' one and add yoghurt and pecans mixed fruit.

well, we made it! put the mixture in a loaf tin at 2:10pm and finally took it out in desperation at 3:45pm as we had to go out to a friends' house.

it was just cooked and the bottom stuck in the tin. managed to extract it tho and did a rebuild before it cooled.

So nil point for presentation but 10 out of 10 for tase!

half gone already YUM!
