Breakfast bake ideas

I've been enjoying baking things for breakfast lately, been inspired by a cookbook (Morning Treats) but it's very American and everything is filled with sugar.

Would love ideas for non-sugary baked things like scones, croissants or crumpets. Fruit is fine, I just don't want to stew it in a pile of sugar!

I've always fancied a Strada (I think it's called) - like a huge savoury bread pudding thing. But there's only 2 of us and I don't need all the carbs. For several of you it could be lovely.

I do different variations and flavours of baked oats for brekkie.

I have a lovely and easy recipe for stove top drop scones.

250 g self raising flour
2 eggs
300 ml milk

Crack egg into well in flour, mix in milk with whisk/mixer a bit at a time so it doesn’t go lumpy.

I then divide mix into two bowls - one for sweet, one for savoury. In the savoury one I grate in cheddar cheese to make cheese ones. You need to put in quite a bit to get a strong flavour - I grate in until the mixture looks visibly full of cheese, but you can experiment to your taste.

The sweet ones I either cook plain and then top with eg Nutella etc, or for a more healthy option I just mix a handful of raisins through.

Then fry (i do them in olive oil).

You can replace the ham with pastrami or mushrooms or tomatoes , change up the cheese. English mustard replaces Dijon etc…

Have looked at the smitten kitchen blog? She’s great for breakfast and brunch and has plenty of savoury and relatively healthy options in amongst the sweet stuff.

I used to make something very similar to these oat bars with snipped cooked bacon or grated cheese in for my teens' breakfasts on the go. It's a simple bake and they keep well.

Roast leftovers. Potato, pumpkin, swede, cabbage whatever.

Onion and garlic into a pan for a bit, add veges chopped on the board together. Heat through and allow to brown, chopped chilli in, too.

Mix through a whisked, salted egg, turn it all over and allow to cook through.

Serve. Or a fried egg. Or a softly boiled egg.
