Could we do a salad thread please?

On the food pet hates there were some super salad ideas which I have screenshot and I'm a bit lacking in this area

Also made this the other day but not enough Endemame so used some peas. 🫛 didn't have fresh basil so used mint. Crumbled feta on top 😊

For me, a good salad is al about contrast. Hot, cold, creamy, acidic, crunchy soft. Makes it interesting instead of crunching through a plate of leaves. Quick lime juice pickled onions or shallots are welcome on almost any salad. These are my three favourite salads at the moment.
Salad with green goddess dressing - I make this dressing with all yogurt rather than a mix of yogurt and mayo, and I love it. It's fresh and herby, and has richness and a bit of acidity from the acid.

Miso and peanut butter chickpea salad - probably my favourite salad recipe. Miso is such a cheat for delicious food. I don't leave the chickpeas to cool, because I prefer the warmth against the cold background ingredients.

White bean Caesar salad - I love the texture of the roasted beans in this. Like miso, tahini is another shortcut to my heart and this is so simple and tasty on a summers day.

I knew watermelon/feta was a thing but this is too much. Then again, people do seem to love their melon/feta. Remember cantaloupe & prosciutto? Sweet salty I guess. Must be just me!

I do love feta & tinned beetroot in a green salad with tomatoes though. Makes a pretty pink dressing by itself 😄

My favourite is crispy goats cheese & chilli beetroot salad with green mixed leaves, cucumber ribbons & topped with pine nuts. All with a Dijon mustard vinaigrette.
I slice the individual goats cheese into 2 discs ( with the crust) & heat gently until melted & crispy. Top the salad with the crispy cheese.

Spinach, grilled peach, cucumber, feta and pomegranate. So good.

Grilled and fresh watermelon, red onion, spinach, cucumber and feta. add peri chicken if you want. Balsamic

prawns, mango, iceberg lettuce, tomato. With a chilli, oil and mango dressing.

courgette, onion, feta, tomato, peppers, watercress. Oregano lemon and olive oil dressing.

My new addiction is roasted kale in a salad. Adds a nice crunch
I chuck anything in from gherkins to Parmesan shavings to chicken dippers!

I made a warm salad this evening and used a really simple yoghurt dressing

equal parts olive oil and lemon (didn’t measure because I’m stupid)
few tbsp Greek yoghurt
chia, flax and hemp seeds, salt pepper

mix well.

Sorry to be a bit late to this thread but only just saw it. Salads are my thing! I eat them for breakfast - literally, I love a breakfast salad. Here's a few lovely ones.

There's a Cavolo Nero and grapefruit salad in Alexina Anatole's book Bitter that I just can't stop eating. It's gorgeous. It's not online but I recommend buying that book because it's a joy.

Roast squash with tahini lemon dressing - insanely good. It's much more filling than it looks. I usually have it with some salad leaves as it's a bit too heavy otherwise.

This sweetcorn salad from Smitten Kitchen is inspired by esquites (Mexican street food) and quite frankly I can eat it all by myself but would have a fight on my hands in this house.

To answer the yoghurt dressing question - I tend to mix greek yoghurt, a bit of olive oil, some lemon juice as a really basic one. I add honey and/or mustard, herbs, garlic etc as needed.

I like the butter bean idea. I think I'd do it with burrata instead of ricotta though.

We had a lovely, but basic salad last night of mixed leaves (includign some rocket), sliced red pepper, toasted pine nuts and avocadoJust olive oil and balsamic on top. Really good as a side to the jacket potatoes we were eating.

I sometimes do a sort of Asian style salad at lunch. I buy gyoza that you just have to fry/heat up. Then I use rice noodles, julienned carrots, peppers and cucumber topped with whatever fresh herbs I have lying around - usually mint and basil, but parsley and coriander would work well. Then I make a dressing which is roughly 2 parts soy, 1 part honey and a little bit of sesame oil.

I also like a fairly basic caprese - avocado, mozzarella and tomato. Topped with fresh basil, some olive oil and a drizzle of balsamic then salt and pepper.

Made a crispy butter bean & chicken salad with left over Ottolenghi's beans in preserved lemon & shreds of chicken thighs & skin. All fried until very crispy in olive oil. Used the roasted garlic in a viniagrette dressing & added to a little gem, rocket & sliced radish salad. Love the combination of crispy & crunchy here.

@ScrambledSmegs I have Bitter! And I must admit I've overlooked that recipe. You've convinced me to add it to next weeks food plan!

This gem salad with maple, lime, and sesame dressing from Ixta Belfrages book Mezcla is a brilliant side salad to accompany other dishes. It's vibrant and interesting without overpowering.

A salad which works as a whole meal is this roasted aloo gobi salad from Meera Sodas first book Made in India. It is fabulous, though perhaps does stretch the boundaries of what is considered salad. I like to go full on chaat style with this and serve with coriander chutney and tamarind chutney in addition to the mint yogurt.

Being the stuck record that I am, I cannot let a salad or Indian food thread go by without a mention to the incredible Dishoom chilli broccoli salad - so crunchy and tasty and fresh. I love this, every time I have made this for guests I have been asked for the recipe, and on a couple of occasions been served this when I next visit them!
