1 oven: roast lamb AND crispy potatoes?!

I am cooking a garlic & rosemary leg of lamb tomorrow, which all the recipes suggest requires a cooking temp of 170 degrees Celsius, but I also want to cook crispy roast potatoes, which I usually do at 180. Can I rest the lamb for an hour whilst I do this? I do have another oven, but it’s nowhere near as good as my main one.

Yes you can rest a joint of meat for considerable time. I think at Christmas our meat (not always turkey and certainly not a whole one when it is), sits for about 2 hours, wrapped in plenty of tea towels and foil

Get the lamb out, put it somewhere to keep it warm, whack up the oven to nuclear (180 is no where near enough) and in go your potatoes.

To be fair when we got this oven (some years ago) I really struggled with understanding the temperature compared to gas marks

So potatoes, really need to go on at least 7, preferably 8.

But 180 is gas mark 4!!!

I forgot this for a while and in recent years remembered how low 180 is.

Lamb is better the longer it is rested, so plenty of time to turn up the heat and do the potatoes.

Yes, it's actually recommended that you rest lamb for about an hour. Plenty of time to make crispy potatoes, especially as your oven will already be toasty.

Brilliant; on all the websites I’ve been on, it recommends leaving it to rest for 10-15 mins, so I was panicking it would carry on cooking too much if I rested it too long. Panic over!

You can put your potatoes in to the oven with the lamb and just turn the heat right up when you take the lamb out to rest (say half an hour) and they will crisp up nicely.

Exactly what I was about to ask. I often make crispy roasts in the air fryer! Very quick and come out beautifully!

That's what I do. The potatoes do their initial cooking through perfectly well at the slightly lower temperature. Then I take the lamb out, cover with foil and turn the heat up on the potatoes for half an hour.

I did roast leg of lamb yesterday, put the roasties in to start off at 180 then took the lamb out half an hour before serving and whacked it up to 200 to finish off.

I rested the lamb for an hour on Easter Sunday and it was still good and hot when I carved it.

Yes you absolutely can rest the lamb for an hour, in fact it is recommended. Take it out of the oven slightly before you think it's done to your liking as it will carry on cooking in the residual heat as it rests.
