Healthy fridge fillers ?

Hi

Would you help me fill my fridge ?

I have 3x children, one coeliac and diary intolerant, one who doesn't like mayonnaise and one with new shiny braces so can't eat hard stuff.

All are good at cooking. I want to fill the fridge with all sorts of salad / veggie type stuff so that they can raid and make their own healthy meals rather than resorting to cheese on toast.

Ideas so far :

Cold GF pasta
Cold potatoes
lots of different goat cheeses

What are the basics beyond leaves, cucumber, tomato, carrot etc that you would have in, and do you have any lovely fridge lasting recipes

Traybake of roast veggies like peppers, mushrooms etc? That they can put in a wrap.
Falafel
Boiled eggs

Cherry tomatoes and radishes
Hardboiled eggs or tortilla francesa or tortilla de patatas
Cucumber, carrot sticks, peppermint with hummus, baba ganoush, pea puree, etc.
Cornichons or baby onions etc. pickled
Grated carrots in lemon juice
Coleslaw / grated cabbage

We make a salad of cooked rice, tuna and boiled egg (chopped) plus whatever veg we have to hand, we tend to always add cucumber and tomatoes, then avocado, beetroot, peppers, radishes depending on what's to hand. Dress with olive oil or whichever vinaigrette you like.

Eggs, hummus and cheese are my basics. You can get vegan cheese for the dairy free child.

ooooo all brilliant !!!

Soooo off to lidl tomorrow for eggs, oats, apples, pears, aubergine, and cabbage. Anyone tried those home made pot noodle type ideas ?

Co- Op does a very handy stirfry kit with quick cook noodles, vegetables and a sauce in one pack. You can add prawns or egg. Or the kids can make their own sauce if very health conscious. I always have one in my frig. The Amoy straight to wok noodles are another favourite.

I also like to have tortillas, tinned sweet corn and tinned black beans for a quick and healthy quesadilla.

DS is back from uni on a real good health kick. I have dozens and dozens of eggs, avocado and smoked mackerel all of which seem to be his go-to. Also mango, watermelon, apples, blueberries. Plus salmon, sea bass, chicken and steak. Salad leaves, olives, cucumber, red pepper, carrots, celery, tomatoes , and to make coleslaw spring onion, white cabbage, sour cream/yoghurt, limes, coriander. Plus broccoli pak choi green beans sugar snaps for stir fries and unsalted nuts - brazils, cashews, walnuts, almonds and pumpkin seeds.
