Roast lamb - leftovers?

planning to do a leg of lamb this weekend and will definitely have plenty leftover!

can you share your leftover recipes with me?

also, how to best reheat the lamb IF we do a lamb roast one day and then again the next day?

I always reheat in the gravy so it stays moist. It won’t be pink but I always cook my leg of lamb long and slow so it falls apart and at the end put it on the BBQ so it goes all brown and caramelised and sticky on the outside.

leftovers I freeze then use in a shepherds pie with mash on top or wraps or pitta with salad and feta and yoghurt mint sauce.

Moussaka or shepherds pie. Any recipe that requires lamb mince basically. Chop the remaining meat into small pieces and use as a lamb mince replacement (just don’t need to brown the mince)

sprinkle it with ras el-hanout and zaatar spices, add a generous drizzle of tahini dressing or humous dressing, and serve in flatbreads with salad

Add to a mildly spiced rice fried with onions and peas and peppers for a pilaf

agree with whizzing up to make mince then things like shepherds pie.

cook with lentils, garlic and spices - lamb dhansak.

I really like this recipe, you don’t need to mince the lamb and you mash up the roast potatoes and parsnips for the topping, so it uses those up too. And it’s really tasty.

Biriyani is great with lamb. Also put the lamb in flatbread with hummus, chilli sauce, grated carrot, onion and red cabbage.

I’m im not keen on the texture of left over lamb so I like it best shredded in a stir fry. With lots of fresh herbs and soy, ginger and chilli.

Stew, soup, tagine. If doing another roast dinner then it’s the gravy and veg that are hot, the meat can’t be reheated as just as it is, it would be dry.

It can be thinly sliced and frozen. We have a manual slicer that can cut it really finely. I don't eat ham but use cold lamb in sandwiches etc instead. Nice with a sprinkle of salt, or mustard. Of course use boneless lamb for this!

Guys. I made a lamb ragu it was UNREAL.
Just chucked it in the slow cooker with onion, carrots, tinned tomatoes, stock, herbs, garlic. Cooked on high for 2 hours and low for 4. Blended it with a hand blender. Was beautiful!

Yes to rissoles. My gran used to make them and they were amazing. I think lamb, onion and cooked potato minced up together and made into burgers for want of a better word and fried. ( The onion may or may not have been cooked, can't remember.) I would probably add garlic and rosemary but omg they were great.
