Flour to use in breadmaker

I've used a Panasonic bread maker for years. Used to make all types of bread but more recently its a standard wholemeal loaf and white dough to make pizzas.

I always bought standard Tesco strong wholemeal bread flour until covid shortages and it hasn't ever come back into stock.
For the last year or 2 I've been using the M&S Specialty Very strong Canadian wholemeal bread flour and was still able to make a decent loaf. I occasionally add some of the malted seedy one from the same range.
It's getting harder to get the same rise. The crumb structure is tighter and the loaf is just more dense. I've added a bit of Very strong white flour to give it a better rise and not much improvement.

Anyone still able to make decent wholemeal in a bread maker? And if so what flour are you buying.

It's ages since I've made a white loaf, but yesterday thought I'd do one. M&S flour again from same range and it was pretty rubbish as well. Very frustrating

I get my flour online from the Cotswold flour company. I recommend them a lot. I get a Canadian strong white, a lovely Cotswold crunch that is sort of malted, which is our everyday bread, very tasty. Also wholewheat, and pizza flour, flour with grains, flour with seeds. Just took a delivery last week and trying their French bread flour. I love making different breads, and their flours have never let me down. I have a Panasonic too.

Was getting very excited by the Costwold Flour company, but unfortunately they don't deliver to Northern Ireland 😢

It may be the age of your breadmaker. Do you have a problem with the top caving in a bit instead of making a dome? Mine is about 15 years old and is doing this but am going to run it till it's completely caput. My Dad's did the same - he bought a new one and the problem was solved.

I find that warming the water and using the quick bake helps.
