I bloody love Saag

...and I have absolutely no idea how to replicate it at home.

I order a side dish of saag nasal and boiled rice when we go out for a curry and I always feel satiated but never overloaded.

I'd LOVE to try and make it but the recipes online never seem to have the same taste as the curry houses. Can anyone help me?

This sounds in orthodox but I saw Rick stein in India make a good one.
I think he actually had an Indian cookbook.

I think you probably want waaaaay more ghee than you'd think, cook the onions down for an age, fry off spices properly and add jaggery (the sugar rocks looking things with sulphites)

In general eating out tastes so much better because calories are thrown at dishes in a way you just wouldn't at home

If you hit in a good recipe do share though!
