Hi All
I have bought lamb shoulder and have a bottle of red wine - both for tomorrow. Please can I have your best slow-cook recipes...

We do the Bombay potatoes as roasties and either roasted broccoli with ginger and garlic, an Indian style shredded carrot salad or kachumba, depending what veg we have in. Obvs depends on the type of chillis you use but it's not ferociously hot.

Drink the wine with it!

Brown the shoulder really well. Slice two onions thinly into half moons, fry them in the same pan you browned the lamb in gently until they're translucent. Add about half a bulb (or more) of garlic to the pan sliced or minced, then a couple of chopped carrots and some chopped celery if you have it. Transfer to the slow cooker. Add half a bottle of the wine, Then add two tins of chopped tomatoes, a big squeeze of tomato puree, and 500ml of chicken stock. 3 tsp of dried thyme, and a couple of bay leaves. Cook on low for 8 hours.

My other favourite way to do lamb shoulder is to cover it in harissa paste and slow cook it covered in foil in the oven, on a bed of sliced onions. Then you can drink all the wine Grin

I did a James Martin recipe from the BBC Good Food website a while ago - doesn't seem to be there now, but it used a couple of halved onions, garlic and some rosemary, white wine (I'm sure it white, but use red if that's what you've got) and some stock and was slow roasted tightly covered with foil for around 3 hours. No reason why you couldn't make it easier by using a lidded casserole if you've got one big enough.

Sorry to ask, but was this the one with "loads" of onions that basically disintegrated?
Only asking because I made something similar a while ago and I can't find the recipe.... I need the qty ratios.

I also remember altering it slightly by adding a few dried mushrooms (I pulverised them with a little bender as DC don't eat mushrooms! 🤦🏻‍♀️)
The result was amazing!

I don't think so - the onions act as a trivet so the lamb kind of steams rather than stewing in the liquid and the onions, garlic and herbs add flavour to the juices or you can make gravy with them.

Thank you - this is just what I was looking for... do you think it will work with shoulder?

Thank you to everyone else for the other suggestions, I will definitely give that a go next time we have lamb, just looking for something a bit more traditional this time.

I usually use a shoulder and it works beautifully. One of those dishes that everyone raves about and compliments the cook on, but you can feel very smug because it is so easy.

This is literally what I have done this morning for MD lunch. It has been slow cooking for two hours already and the smell is heavenly.
