making a cake for diabetic..

I know, I know but my mum is coming on sunday and all she wants apparently is "a nice slice of cake". She's diabetic with quite significant issues with her feet and isn't supposed to have it. I've found a betty crocker sugar free mix in tesco but I haven't made a cake with a packet mix for years and I'm suspicious that it will taste artificial and I'm completely stumped at how to ice it. Id generally do butter cream. She doesn't like fresh cream.

Any ideas?

Sugar free or ‘diabetic’ stuff is not advised for actual diabetics as it’s pretty much laxatives! The number one ingredient on that cake box is a laxative so I wouldn’t touch it.

You are better to focus on low carb cake/snacks that use e.g almond flour

Sugar-free cake mix doesn't sound like it would be a nice slice of cake.

what kind of cake does she like?

you can look up gluten free recipes that use ground almonds/nuts instead of flour.
fruit are naturally sweet.
so I might go for a carrot cake with raisins made with almond flour.

she will still need to check her blood sugar and use insulin accordingly.

She eats masses and masses of sugar and both she and my DF are in complete denial about the fact that she has significant problems now.. She would generally go for something like a victoria sandwich or a chocolate cake.

Personally I think the bakewell tart on that BBC site looks nice.

Counterpoint: it's for Mother's day, make an actual cake.

You are not responsible for her usual food choices, and all people with diabetes would be 'permitted' cake on a special occasion.

Agree. One slice of cake makes no odds if she's not looking after herself generally either. These are her choices.

If you look up Keto cake recipes you might have better luck as they are generally lovely and low carb! Brownies made with almond flour are fab!

I second sugar free banana cake - use crushed almonds instead of flour. Tastes nice and no sugar needed.
