Please can I have some ideas for a veggie dinner party for 4?

DH and I are the veggies so it's not that I have a problem cooking veggie for guests but need some help for a simple, quick but delicious meal as I am working during the day and not much time to prepare beforehand.

They eat meat and fish and dh and I eat some fish. I thought I would keep it veggie though as they are happy to have it.

How about garlic mushrooms with crusty rolls to start, followed by salmon kabouliac (I think that's what it's called!) - salmon fillet with rice and various other ingredients wrapped in pastry.

sorry- read it wrong!

One of my fave dinner party recipes is salmon fillets with sweet chilli sauce poured over and baked in pyrex dish in oven. I usually add a bit of water too. Only takes about 20mins and is so easy.

Is lovely served with roasted veg and cous cous.

How formal is it? If it's fairly informal I would stick to something simple and comforting like mushroom risotto or veggie sausage casserole. Or homemade roasted veg & pesto tart with jacket spuds & salad. If they like curry, that can be made in advance and reheated, same for veg casserole or veg shepherd's pie. Have fun!

Garlic mushrooms is one I just make up as I go along! Melt butter, add a dash of olive oil and fry a couple of diced shallots or a small onion and then add 2-4 crushed/chopped cloves of garlic (depending on your taste). Fry gently until soft but not brown, and then add mushrooms - quantity up to you, but probably around 4-6 large-ish mushrooms each, sliced.

Season with salt/black pepper and a small amount of oregano.

Add a teaspoon or so of tomato puree and a slug of white wine, and then cook gently for a while.

Lots of moisture will come out of the mushrooms, so let some of this cook off.

Serve with crusty bread to mop up the juices.

Salmon Koubliac

3 eggs
375g puff pastry
212g can of salmon (red or pink)
150ml creme fraiche
2 spring onions, chopped finely
1 tablespoon chopped fresh dill
salt and pepper

Preheat oven to GM6 or 200 degrees C

Hard boil 2 of the eggs and chop them

Roll out the pastry and cut 4 20cm squares

Fold the salmon into the creme fraiche along with the spring onions, dill and chopped eggs and season

Divide the filling between the pastry squares

Beat the remaining egg and use it to brush the edges lightly. Bring up sides to form a parcel, sealing the edges to form a cross shape

Pinch the edges well to seal

Place the parcels on a baking sheet and brush with the remaining glaze

Bake for 20-25 minutes or until the pastry is well risen and golden brown - serve warm or cold

This is the only recipe I could find immediately (from Quick Fish, Thane Prince, Sainsbury) - when I've made it it has involved using fresh salmon and mixing the fish with cooked rice, and has been done in a single 'pie' as opposed to four individual ones - but this might look more interesting if it's a dinner party?

Panicking now about the mushrooms - probably will need more mushrooms than that! Don't know how many per person, but say 75g? They do cook down very well.
