Pork stew/casserole or similar

I love a good stew or casserole, although the rest of the family is less keen. I also love pork, with mixed responses from the rest of them (outside of the obvious pork sausages/bacon etc).

I'm therefore thinking of making something for myself, maybe freeze some portions for lunch times etc.

Any recommendations. I've done some googling and a few options have come up but tried and tested appreciated.

Aldi do a lovely pork casserole, I personally would never have thought to use that meat, but it’s lovely. It’s in the fridge with everything in it, gravy, veg, meat. You just add a bit of water and bung it in the oven.

I've made some great slow cooked pork shoulder chops. Bung them in the slow cooker with whatever you fancy, eg barbecue, Asian spices, Greek, etc. Just brown them a bit beforehand.

Also, a friend was making smoked sausage casserole the other day but not sure what else was in it - beans maybe?

Not a recipe but pork goes really well with cider, apples and mustard. I use pork tenderloin but don’t usually slow cook it, though you could. For a casserole I’d put in any combination of available root veg and some flour to thicken but I usually have this cooked on the hob with creme fraiche to make a creamy sauce - so fry the sliced tenderloin with chopped onions, add cider, chopped apples and maybe mushrooms, garlic, whole grain mustard and other seasonings then few mins before serving add spoonfuls of creme fraiche to thicken the sauce and simmer. Works to serve with rice/pasta or roast potatoes and veg.

I do a slow cooker casserole, use a combination of pork shoulder, chorizo and chipolatas or sausages, chop an onion and a red pepper then add a can of tomatoes, baked beans and can of mixed beans with a stock cube in the slow cooker all day it's really tasty and super easy to prepare.

I use red or yellow peppers instead of green and bung in the peppers and olives for the whole cooking time rather than 30 mins from the end.

Not a traditional stew, but a delicious alternative I've also made it with chicken, or even just veg- spinach, sweet potato and basically any veg in the fridge.

Do you like pea/ham stew? I say stew because it comes out so thick, I wouldnt call it a soup. You can of course thin it down though.
I buy a smoked ham hock/knuckle from the butcher and remove the skin. Then soak 2 packets of those quik soak peas which only take about 1hr then rinse well. Add chopped onion, carrot, celery, potato or any other root veg I have. I often do a version of paprika pork with pork shoulder, peppers, mushrooms, smoked paprika and a hint of caraway and/or fennel seed. It's a lovely combination.

Casseroled Pork Chops with Cider and Mustard

4 pork chops, bone in
2 tbsp dripping or butter
1 large onion, halved and sliced thinly
2 eating apples, cored and cut into wedges
500ml cider
2 tbsp Dijon mustard
2 tsp cornflour, mixed with 1 tbsp water
salt and pepper
chopped fresh parsley

Melt the fat in a large, deep pan which has a lid. When it is hot, quickly brown the pork chops, then remove them to a plate. Add the onions to the pan and fry until soft and golden. Pour in the cider and add the mustard and slaked cornflour, stirring well to combine everything, before adding the apple pieces and returning the chops to the pan. Cover and bring to the boil. Transfer the pan to a 160°c oven for an hour, then check the seasoning and correct it to your liking. Stir in the parsley and serve with baked potatoes.

The nicest thing I've ever made with diced pork is a pork chili verde. I'm pretty sure this is the recipe I used. I did need to buy the tomatillos off Amazon (at like £7 a tin!), though you may be able to get them in the shop if you have better shops near you. But it was absolutely delicious and is my favourite chilli now - though I've only made it once since because of the faff of the tomatillos and the long cooking time. Thinking about it now, it may be time to make it again!

Wow, lots of great suggestions here, thank you. I might try the Korean one first - I was thinking about it earlier and realised I'm particularly interested in something vaguely Asian in flavour profile. That might also make it more appealing to DH and DS. And then will check out paprika pork and also think about how to do the more traditional apple/cider type option.

I like Polish pork bigos! Goulash is similar but not as good in my opinion. Also love a Korean style pork stew.

Love this Creamy pork casserole

My favourite meals with pork though are carnitas or ramen. Or of course lovely roast pork, crackling and stuffing baps 😋.

I have two slow cookers. I do this in the small one but it could be done in the oven.

Pork ribs
Passata
1 tin broad beans or kidney beans
Some cubes of chorizo
Seasonings of choice

Put the pork around the edge of the slow cooker, drain the beans and put them in the middle with passata and chorizo. Add a bit of boiling water to start to heat it up.

Leave for hours. All day.

Don't look at it because it goes through a weird looking stage as the collagen around the ribs cooks out.

The pork will eventually come off the ribs. Remove the rib bones - I find the best way is to do this with chop sticks.

Serve with mash or crusty bread.

Asian style broth with belly pork.

Belly pork strips
Water
Garlic - I use a cube of frozen
Ginger - again I use a cube of frozen
Veg / noodles or whatever is in the back of the fridge.
Seasoning - I use a chili / paprika / garlic powder

Rub the seasoning in to the pork and bake in the oven or air fryer. I would do this while you have the oven on for something else. Maybe do this the day before and let the meat cool - the object is to crisp up the fat.

Asian style broth, in a pan put boiling water with the ginger and any seasoning you like.

Add the veg, broccoli, pack choy, water chestnuts, spring onion - whatever you have in.

After about 5 mins cube the pork and add to the water. If you are using noodles add them and cook for 5 mins.

Serve.

If you can get hold of them, pork cheeks are delicious. Slow cook with tomatoes, onions, peppers, beans and paprika. Chorizo optional.

I'm sure I've bought them from Morrisons before but asked in several branches and butchers and farm shops but not yet been able to track them down. I think they're available online but delivery turns something very cheap into ££££s.

Good old Delia has a great Pork cookery book which has some great ideas.

The other one I use regularly is a casserole of spiced pork with apricots. Its tenderloin rounds sauteed off in seasoned flour, then diced onions cooked down, some cinnamon and all spice added, then some red wine vinegar, poured over the pork, add dried apricots and chicken stock and cook down slowly. Finish off with cream.

I love a normandy style pork and also tagine.
