Thai curry paste

I love Thai curry and so does DH. The kids like it but not the spice level. All the Thai curry pastes I've tried are too hot. If I put more coconut milk in it goes too watery and I can't taste the rest of the ingredients! Anyone any ideas / tips? I suppose I could make it from scratch but I'm looking for a milder jar/packet paste first if such a thing exists.

Also, is green hotter than red or the other way round?

We find the Waitrose red curry paste very mild. Overall, most red curry pastes seem to be pretty mild.

Green is hotter than red, surprisingly.
Try using the blocks of creamed coconut, rather than the milk.

The obvious answer is the make your own. Time consuming though, but you can refrigerate it for a month or freeze in ice cube trays then bag them up!

I always thought red was hotter than green generally and yellow was the mildest. Red Mae Ploy paste (sainsburys), which comes in a plastic tub, is hotter than most other brands. I find it saltier also. Try a yellow curry paste, but you might need to go to an Asian grocery store to find it.

Beware the dried chillies un the Blue Dragon kit. I don't mind a bit hot but these take the top of your head off!
I cook it with them in, then remove them to serve.

Not sure I'm getting your point. Surely whether or not a curry paste is "too hot" simply depends on the amount yiu are using? Or are you saying you use a pre-packed sachet of it, rather than a jar? No need to water down the curry, just adjust the quantity of the paste.

I use Mae Ploy yellow curry paste (mostly because it’s vegetarian) and that’s definitely milder than red/green curry. Finding a mild red or green curry will be hard, as the base of those curries is red and green chillies, respectively.

Yeah you missed it completely. They're saying that when they reduce the amount of paste the other flavours also reduce too much - you cant separate the flavour and the heat of a pre-made paste.

@ranchdressing yes that's what I meant thank you.
Going to try the blue dragon kit (minding the dried chillies thanks pp!) and see how I get on.
Failing that I might try making my own but using lemongrass paste. I hate chopping lemongrass!! And freeze per another pp.

Coconut cream is also a good call. I've used that before and it is less diluting but had forgotten about it.
