I have a nice recipe for a courgette and gruyere puff pie. Yum.
Or just bake squares of it to top off a veggie casserole?
Or make little cheesy twists?

450g (1lb) courgettes trimmed and sliced
3tbsp olive oil
375g pack of puff pastry
flour to dust
2 medium eggs
2tbsp creme fraiche
75g (3oz) gruyere, grated
2 garlic cloves
4 tbsp chopped parsley
salt and pepper
50g (20z) fresh white breadcrumbs

  1. roast sliced courgettes on baking tray with drizzle of olive oil for 10 minutes,then transfer to greaseproof paper
  1. roll out pastry on lightly floured surface to 30cm square, place on baking sheet.
  1. whisk one egg with the creme fraiche. then add cheese, garlic and parsley. season and mix well.
  1. arrange courgettes on top of the pastry leaving margin. pour mixture on top. scatter with breadcrumbs and remaining cheese.
  1. fold over pastry sides and to create rim. Chill for 10 minutes (I think it means the pie) Beat the remaining egg and brush over the pastry.
  1. Bake for 30 minutes until pastry is crisp and golden brown.

Bake Salmon inside it. Put crystalised ginger and currants on top of salmon fillets, and wrap the whole thing up in puff pastry - brush with milk & pop in the oven for about 25 minutes. Delicious!

The recipe is probably fussier than it neads to be. You could skip the parsley and breadcrumbs.
Ready rolled pastry is obviously easier because you can do it without any cutting. And make sure pastry is at room temp before you roll it out or it will break.
It is a lovely recipe. Think I'll need to make one this week now.

very easy one:

Roll out, sprinkle with spice of choice and cheese of choice (I like applewood smoked cheddar) and parsley. Roll up, cut in slices like a swiss roll, Bake in hot oven for about 10 mins,

Or alternately put christmas mince in it.

Cream Slices?

roll out and cut into oblongs - place on a baking tray and cook for about 15-20 mins. When cooked leave to cool, cut in half. Whip up some double cream with a teaspoon of icing sugar in. Spread each half with raspberry jam and the cream, sandwich back together and sprinkle the tops with icing sugar.

~Roll out. Cut into 6 inch or so squares. Slice some tomatoes very thinly. Pile in the middle with about a half inch border all round. Bit of olive oil and shredded basil (or dried if you haven't got any fresh). Bake. Very very yum.

we made little fruit samosas last wk - rolled pp really thin and rolled sugar, vanilla and cinnamon into it. Then wrapped it round stewed apples and fresh blueberries before bunging it in the oven and basting with butter.

Mmmm - I love the idea of the fruit samosas. And I do have fresh blueberries in - this is mumsnet after all! I think I might make some for breakfast!
