Can anyone help with some 'hidden veggie' meals.

I'm just hoping some of you lovely people have any meal ideas with 'hidden veggies'? my son has autism and his diet is very beige! I would like him to get some goodness in him too but it's easier said than done. I recently tried his pasta with some real tomatoes in the sauce and that was a win. But I have 0 ideas for anything else?! So if there's anything you or your children have tried if you'll help a girl out 🤗

I think issue.

I bought a nutritionist bullet (other brands are available) blender and just pureed veg and put it in any meal he would eat.

So cottage pie actually looked like just mince in gravy but had carrots/onions/celery/spinach in it.

I also thought about textures. He liked chicken nuggets and tried veggie nuggets and he liked them (even though he wouldn't have had that in another form.

I hide all sorts in pasta and curry sauces. Cabbage, carrots, peppers, spinach, courgette, I just use a hand blender to whizz it all up once cooked. If I'm short on time I'll grate the carrots and things that take longer beforehand.

Is it the texture of some veg he dislikes? Would puréed work eg swede and carrots with some fish, how about making burgers and adding tiny diced veg and beans to make it healthier? If it’s the taste he objects to eg I would never eat greens my whole life until I discovered putting them under spicy food like curry in place of rice, so cauliflower rice, shredded cabbage, but dont really taste it because of chillies and spices. Will he eat soups and stews or does he only like separated food?

Yes he's very sensory and eats with his hands. So texture is what he doesn't like. He literally only eats nuggets and pasta dishes as long
as they are tomato based. Maybe I could add more veggies into his pasta sauce I didn't think of that. Thank you x

I stuff all my sauces with random veg. Pesto pasta usually gets broccoli, spinach, peas, garlic and cauliflower in the sauce. Tomato pasta will get carrots, cauliflower, red pepper and garlic. Chicken curry will have broccoli, cauliflower, carrots, peas, onions and tomatoes all blitzed up in the gravy.
My son has never noticed!

I blend carrots, peppers and spinach into tomato pasta sauce. Start small and build up. If you overdo the spinach it goes too green. Also, add tomato purée as it’s very good for you!

Mushrooms, carrots, small amounts of chopped frozen spinach and courgettes all get hidden in tomato pasta sauce here for the same reason!

I was going to say sneak them into the pasta sauce. Also curry if they’ll eat that.

And if he will eat muffins (not sure if they’re a thing in the UK) you can get veggies in there too.

Does he like smoothies? My last family used to make their son a smoothie every morning loaded with spinach and bananas. Also yogurt and peanut butter so you couldn’t really taste the veg!

If he’s a fan of tomato-based sauces, spaghetti bolognese is a good option. So easy to hide onion, carrot, celery, courgette in the sauce.

Would he eat anything as a dip with breadsticks or pita? You can blend loads into dips!

What about finger-sized roasted sweet potatoes, celeriac, carrots etc., which he could dip into ketchup, like it's a chip?

Or lightly battered veg, tempura-style
