I’ve gone off breakfast recently and even though I work from home most days, I just gravitate to pre-made bars or biscuits. Obviously they are so expensive and they tend to be quite sugary 😬

Years ago I used to make a protein flapjack thing for my afternoon snack which would be perfect for now I but can’t for the life of me find the recipe!

Does anyone have any tried and tested recipes for breakfast/energy bars or similar? Preferably chewy and peanut butter-y. High protein or having the option of adding protein powder that would be even better as I’m in the midst of a lifestyle shake up and trying to increase my protein intake.

Ooh, I love a good breakfast bar thread. I am searching for the perfect one. Here's a slightly unusual one made with oats and eggs that I make sometimes:

Dry ingredients
2 cups Rolled oats
1/2 cup sugar
1.5 teaspoon baking powder
Cinnamon
Salt

[I would think you could easily add some protein powder if you wanted to - assuming protein powder can be cooked?]

Wet ingredients:
2 eggs
1/2 cup milk (any)
1/4 cup butter/oil
Teaspoon vanilla essence

Mix wet and dry ingredients in separate bowls then stir together and leave for 20 minutes.

Then add chopped dried fruit/nuts as preferred to the equivalent of about 1/2-3/4 of a cup. I usually stir in a few tablespoons of peanut butter too.

Bake in a lined baking pan at 180 for 30-35 minutes.

It makes quite a lot and they freeze really well - so I often just take one out and leave on the counter for afternoon snacking.

I have also experimented with drizzling melted chocolate over the top to make them more "kid appealing" which works well- I just melted dark chocolate over boiling water then dribbled it over. The little extra taste was lovely.
