Gooey loaf cake recipe

I really fancy a loaf cake that isn't dry sponge. I don't know if it exists though! I'm imagining like some kind of honey and seed cake, but gooey textured (like a brownie). I'm going to need lots of syrup I guess.

Anyone got a recipe for something like that?

Not gooey (because that sounds dense and claggy) but I made a Mary Berry lemon and courgette loaf cake that was simultaneously meltingly fluffy and moist.

It's not courgette flavoured but it just makes the texture of the cake much better. I can't find the recipe I used but this is very similar iirc.

Oh gosh I was woefully woolly in my OP. I've just read It back and it's hopeless 🙈 So sorry! Thank you to all of you for suggestions, but they're not actually what I'm after.

I'm looking for a honey flavoured loaf cake with a syrupy texture, with seeds/nuts. Like honey and walnut loaf, or similar, but not spongy texture. More like a gooey syrup cake. Is it a thing?

I often make a honey and almond cake where you poke holes in the sponge and pour over the honey. It’s in the River Cottage Everyday book. It’s moist but not majorly syrupy.

It uses wholemeal flour so I try and convince myself it’s healthy! But it has a lot of sugar inBlush

You could always make a chocolate cake and muck it up.

I stood there and watched what was supposed to be a perfectly respectable effort collapse in front of my eyes as Ms Small Fry says “oh yum. I love your fudge chocolate cake, Mum”.

There’s a Mary Berry recipe for a honey loaf cake - I wasn’t a fan as it was very dense but maybe that’s what you’re looking for? (Have a look online for her banana loaf with honey icing, I’m fairly sure that’s the one I’m thinking of)

It sounds to me like a 'poke cake' might be the kind of thing you're after - i.e. you add syrup or honey after baking by poking holes in the cake and drizzling the syrup over it. (rather than making a moister cake to start with, along the lines of a whole orange and almond cake.). These can be round or loaf shaped.
I sometimes make a fairly standard banana bread (loaf shaped) but poke holes and drizzle maple syrup over it after baking. And then finishing with a maple glaze, i.e. more maple syrup mixed with icing sugar. I'm quite fond of maple syrup.

Yeah I think you're right - I'm going to have to mash a couple of recipes together.
Banana cake texture is exactly what I'm after, but without the bananas!

I also came to recommend malt loaf, Nigel slater's is the best!

It may not be a loaf cake in the traditional sense, but the result is similar to what you described—a gooey syrup cake. This dish is known in the UK as a treacle suet cake, even though it doesn't contain treacle. This recipe is a steamed Orange Syrup Pudding inspired by Mary Berry serving 6 people.
