Gluten-Free Vegans, what do you eat for lunch when you're at home?

Please share your quick and easy gluten-free, vegan lunch ideas. Having a couple of friends over for a catch up and want to offer some light lunch but one person is gluten-free AND vegan and I am struggling to see what I can serve up except for chopped avocado and salad.

I'd say jacket potatoes - with roast veg & hummus, or bean chilli, or straight up baked beans. Lots of options and easy to have cheese / butter as options if any non vegans want some additions

Brown rice with gochgang and frozen veg (bibimpap).
Leftover chilli or tinned chilli and rice.
Miso soup with rice noodles and veg.

You could do a nice winter salad - grains, roasted veg, vegan cheese etc. Or soup would be very easy to do as well. Gluten free bread is pretty easy to find and I imagine some free from brands will be vegan too.

I sometimes put nuts in soup as an alternative to croutons.

I'm usually good with rustling up vegan dishes or gluten free dishes but my mind just goes blank when it comes to something that is both.

Lentil soup with gf rolls (warm the rolls or they will be grim)

Rice noodles and veg stir fry, maybe with a peanut sauce or tofu. Check you have tamari rather than soya sauce.

Gf pasta with vegan pesto and roasted veg

Fried rice with cashews

Sauteed kale with raisins and pine nuts on polenta

Hummus with warm gf pitta and crudités

Roasted sweet potato with black beans, avocado, salsa

I’m allergic to both gluten & dairy and my easiest lunch is a toasted sandwich. You can get the toasty bags from Asda/Home Bargains/Poundland. There’s a great suitable loaf from Lidls and my fav filling is: hummus, roasted pepper (buy in jars for any of the above) and ham. Even my husband loves it and he can eat anything. For entertaining you could add a tossed salad and a few GF/DF crisps. x

I just had lentil wraps for tea tonight and frankly I'm outraged that I've not heard of them before. Put 1 cup lentils to 2 of water into blender and left for a few hours to soak, gave them a good blend with half a tsp of salt then cooked them in a pan with oil just like a pancake and they are bloody delicious. I'm presuming GF and very much vegan, full of fibre and protein and just lovely and fluffy. Can't recommend enough. Mine were thicker than wraps but I recon tomorrow if I add some olive oil and a splash more water I can make a thinner more flexible wrap. LUSH! Had mine with chickpea curry but bet they would be ace with roasted veg and hummus and other stuff like that.

Just a quick note of caution with lentils, in case your visitor is gluten free due to coeliac disease. Many lentils have a 'may contain gluten' warning as they are often processed in same factory as other grains, so there is a risk of cross contamination and most coelics would avoid.
Also reading this post with interest as a newly diagnosed coeliac who has also become dairy intolerant!

This is the one I buy, though there is a ‘Promise’ loaf sometimes which makes a good alternative.

I do eat meat but if I'm having a plant based lunch I like a jacket potato with some kind of beans (baked from a tin or homemade spicy black beans) or a lentil daal, or a homemade veg soup with gluten free bread.

Thank you for the suggestions. Some really good ideas. Hoping I could come up with something everyone will eat rather than catering separately for the gluten free vegan diet.

OP, just noticed your username. If you can get some traditional corn tortillas (like from the cool chili company), then you could serve tacos!!! There are loads of vegan recipes. I like to sautee onions, peppers, jalapenos, and courgettes with some cumin and then throw in a tin of black beans. Roasted cauliflower is also good, or you could make vegetarian refried beans or tempeh taco meat, then serve with lots of nice salsas and guacamole

The kabuto and itsu do both gf and vegan pot noodles. Obviously upgrade as you like but a good back up.

As there’s no actual gluten in a lentil/bean and the contamination is likely to be flour blowing around, can you not just rinse the lentils before cooking?

I find raisins give me gluten symptoms and suspect they’re rolled in flour to stop them sticking together. I rinse raisins before eating them.

I do rinse skin on lentils but they're also much easier to pick over before washing - I pulled a whole grain of something or other out of some, the other week.
