chop & par boil potatoes.
throw in a roasting dish with the peppers & a chopped omion.
drizzle with olive oil, basalmic vinegar garlic, mint & rosemary (optional)
roast for 30-40 mins.
Add cherry tomatoes and top with feta cheese.
bake for another 15-20 mins.

can also add other veg. I've tried courgette, aubergine, sweet potato, baby corn, mushrooms, etc...

no peppers in spanish omelette!

you could slice up and par-boil your spuds, arrange in a roasting tin with the sliced peppers (and some tomatoes if you've got em), throw in some sliced garlic, sprigs of thyme or oregano, maybe add some anchovy fillets if you like them. if you have saffron soak some in some hot water for a bit and then chuck that over everything too together with some stock (5 fl oz) (if no saffron just use stock). Then glug over lots of e.v.olive oil.
Roast til it all looks lovely!
makes a good base for cooking fish if you have some (the fish won't need to be cooked for as long though)

Oh. Except I make horrible omelettes. Will dig out Good Housekeeping and follow a recipe for once.

OOOH, do what I said but then bake the eggs over the top. throw in anchovies and capers. hang on, there is a recipe I used somewhere....

boil potatoes.
meanwhile grill/roast peppers (in strips) till sweet, soft + a bit smokey
run potates under cool water + cut into bite sized pieces.
mince up some garlic.
MIX EVERYTHING WITH GENEROUS AMOUNTS OF EXTRA VIRGIN OLIVE OIL + SALT AND PEPPER TO TASTE.

if you want to do an omelette, boil the potatoes till tender and then slice. set aside. fry some onion, the peppers (sliced in thin strips) and garlic over med low heat till really slimy. arrange the poatoes and onion mix in a layer on the bottom of the pan, then pour your whisked eggs over the top. cook over low heat without stirring till the edges look done, then pop under a pre-heated grill till the top is set. cut in wedges and hey, presto. serve with a big salad.
you can also melt cheese (feta, parmesan?) over the top when it goes under the grill.

this is much more fun than the thread about losing weight.

when you whisk the eggs, add salt, pepper, a little cream (if you have it, milk will do if not).

How many are you feeding? I would do 6 eggs to feed a family of 3 or 4. But there again, I am a piiiig (as I confirmed whilst reading said weight loss thread).

Also, if you have any french stick, you can do lovely sandwiches with the leftovers.

also, if it starts to brown too fast under the grill but still looks runny in the middle, cover with foil.

I'm taking the threat of legal action quite seriously.
