Sod cooking with it, just eat it out of the tin by the spoonful...

Someone once practically saved my life by handing me a sugary cup of tea made with evaporated milk.

Yes do try it!

Kerrymum, can you eat butternut squash? Coz it works as a fab alternative to pumpkin in a pie.

anorak · 20/03/2008 15:34

The 'eating it out of the tin' thing is surely condensed milk, not evap. Evap is liquid for a start.

I'm sure you can do the rice pudding in the oven, not sure how long for though, sorry.

cremolafoam · 20/03/2008 15:58

i have a choc truffle recipe with evap in it . wil look
also use it in coconut based curries.
or smoothies

JSo · 20/03/2008 16:05

Kerrymum...did not mean I would eat the 4 tins one after the other ...just meant if it was as good as deadbody thinks then would maybe not get as far as cooking with it.!!!! Have to say I am intrigued by this stuff, never opened a tin in my living piff before....so no clue what it looks like,or what consistency it has etc etc....will let you all know how I get on with tasting it and the outcome of my cooking. cheers

Cremolafoam..thanks that would be great .

Me and hubby are big curry fans and love cooking them..so would this replace like creamed coconut?...

gonna get a tin of it out now cause I assumed it was very very sweet but must be mixing it up with something else.......

no no no

Evaporated milk is unsweetened, consistency of cream and not to be eaten with a spoon.

Condensed milk is sweet and gooey and is the one that people eat with a spoon - or my dad always talks about how when he was a little boy he used to spread it on bread.

lovecat · 20/03/2008 16:59

Oh god, we used to LOVE evap and tinned peach slices as a pudding when we were kids in the 70's - weirdly enough I ended up sharing a house in London with a bloke who grew up in the same area and he too had a tinned fruit and evap fetish... mmmmm...

We had connie-onnie butties too, anorak. It amazes me I have a tooth left in my head, tbh...

OverMyDeadBody · 20/03/2008 17:54

Well, I eat it out of the tip with a spoon despite it being runny and unsweetened! Condensed milk is just a bit too sickly sweet, a bit like a creme egg filling.

cremolafoam · 21/03/2008 15:36

sorry Jso i can't find the recipe for choc truffles but TBH i think there was only 2 teaspoons in the recipe so not going to use up your stash.
as far as the curry is concerned i used it with dessicated coconut and a splash or two of evaporated milk.this was in the days before coconut milk could be bought in the supermarket- but it actually gives the curry a nice texture.

aside from all that i would use it anywhere you might put single cream or creme fraiche.you can't whip it unfortunately but it is lighter in fat than cream( less that 5%) .

JSo · 21/03/2008 19:52

Thanks for looking anyway Cremolafoam. Great tip about using it in place of single cream or creme fraiche......great to know that. Big cooking day is tomorrow so will let you know how I get on. Thanks everybody

Sorry took me so long to get back to you all ...very naughty of me , but just incase anyone was interested I will let you know what I cooked... all 4 tins now used up...

I made a chocolate fondue (thankyou Anorak )and put on to our Choc fountain with 2 tins. With the left overs from the chocolate fountain I used it to make millionaires shortbread (inspired by the youngvisiters finding that they are similiar plus sugar..and I do think so too)....now I know everybody says these use condensed milk but the consistency looked great and i had quite a bit left over...they where absolutely fab. Makes me now think you can adjust the recipe for MS and use evaporated milk. Countess dracula gave me this idea with the fudge idea..so with a bit of improvisation new MS where made but I called them "very rich buggers shortbread"..as not quite the same

Made custard with another tin..thankyou Ladette for Easter Sunday dessert over homemade apple pie.

Thankyou procrastinatingparent used it to make chocolate sauce and poured over ice cream.

So thanks everybody for your posts. I may be totally wrong but it makes me think you can improvise if you have bought evap instead of condensed, may not work for all recipes but did for the MS ..may now buy some and try the banoffee..

So what happened to that fudge recipe then? (Drums fingers impatiently on table.)
