Drying vegetables

Slightly odd question, but do you ever dry vegetables with kitchen roll?

My DH (who is a great cook) said he never does, but I find peppers in particular are just so... wet! Once you've cut them up, that they need to sit on kitchen roll for a bit otherwise they just go soggy when cooked.

Does anyone else do this or am I just weird? 😂

I don't tend do this with things that will give up their liquid when cooked eg. peppers - I would just cook them longer/hotter and in a pan that is wider than it is deep. Then the water will just evaporate off.

I would blot something I was going to be deep frying, like potatoes, to remove excess moisture and starch.

The only veg I dry are potatoes if they're being roasted. After parboiling I leave them to dry under a tea towel. If they're small new pots and not parboiled, I dry the cut edges on a tea towel before roasting. They are crispier without the moisture.
