Milk alternatives in cooking

I’m planning on making a fish pie next weekend but as one of my guests is dairy-intolerant I planned to make the roux using a non-dairy milk. I’ve never used them before in cooking. What non-dairy alternative has worked for other people?

Aldi or Tesco oat milk is how I make a roux.
Oatly also do a single cream & so do Emlea.

Are they lactose intolerance or do the have a CMPA? You can get lactose free milk if they are lactose intolerant. If they have a CMPA then ask them which if any milk alternative they prefer and use that. Or change the menu so you don't have to use a processed substitute (this is always my preferred choice when dealing with allergies and intolerances).
