Taming Twins’ slow cooker lamb curry

So far I’ve had very limited success with my slow cooker, all seems a bit watery and tasteless. But I have all the ingredients for this lamb curry, has anyone tried it? I’d love to use the slow cooker more but don’t like seeing disappointed faces at dinner time

Sad it didn't work out, OP. I bought the poppy book but thought it all looked a bit faffy/variations on things I've already tried, so sent it back. Maybe a mistake! I've planned in a taming twins beef goulash into next week's meal plan, so hope it works...

I have been using the Bored of lunch slow cooker books and they are amazing.. so many fab recipes and very easy. The butter chicken is gorgeous!

I find with the slow cooker it's important to brown and season the meat in a pan first, and depending on the recipe the veg too. I often then deglaze the pan used and tip that in to add extra flavour. If you then open the slow cooker and it's too watery, you might need to either use the saute function for a bit if you have an instant pot or tip it into a pan for a bit more to reduce slightly.

I think the expectation that a lot of recipes seem to have is that all raw ingredients can be chucked in, left and then transform into something rich and tasty when it's the caramelisation of food at the start etc that gives so much of the flavour. The taming twins recipe is the same. It also adds hardly any seasoning - just 1/2 tsp of salt for 1kg of meat and other veg, and not much of other seasonings either! Watch any chef and they will be much heavier on seasoning.

I'd brown the lamb with plenty of salt and pepper and maybe the garam masala and cumin too, as dry frying spices can add flavour. Then add more for the slow cooker too

To date this is what I've done from the book:

Broccoli and cheese soup - sensational
Coq au vin - amazing
Thai red curry was lovely
Honey garlic chicken thighs - I thought these were fine (could have done with more than plain rice alongside), the children loved them
Marry me chicken was great
Chicken and chorizo orzo - need to do this one again, accidentally tipped in 3 x as much double cream as was needed so was a bit too rich
Beef tacos - I think I prefer using mince to the braising beef (it was still a bit tough at the end of cooking but flavour was good)

On my short term list:

Beef bourgignon
Harissa lamb tagine

I also think you need to get to know your slow cooker - I preferred my old one (Lakeland 6.5 litre) I've now got a Ninja with multiple functions and I'm less keen on it as a slow cooker. I'm getting to know it better but still don't think it is anywhere near as good as the Lakeland (although the sauté function is good.
I agree that using recipes specifically for the slow cooker is essential. But be prepared to adjust cooking times significantly (I only use high on my new cooker as low does nothing - undercooked dahl is not a winner!)

I have just added a few recipe books t my wish list for my birthday. I think I'm adding this one now..... these all soudn fabulous.
