What cooking oil and EV olive oil to use?

Baffled by all the articles on Google on how seed oils are apparently unhealthy, am looking to increase my consumption of Omega 3 oils too. Been using sunflower oil up til now but think I can try something different.

What is the best oil for shallow frying, and can anyone recommend me a great extra virgin olive oil for dressings? TIA!

I use Aldi's own standard olive oil for frying, though not deep frying.
For EVO we get this one:

Crisp n dry.. it's rape seed oil.
Hate the taste of vegetable oil.
I use 365 whole food olive oil for dressing. It's about £20.

"Vegetable oil" is usually rape seed oil !

I use it for shallow or air-frying.
The comments about it being unhealthy seem to be from US, & I wouldn't trust the opinion of those who think it's OK to bleach chicken.

I use peanut for frying. No taste at all.

The Casolare olive oil above is sold in Italian supermarkets and is our go to one when my father in law's annual bottles from his own olives are finished. It's excellent.

I use extra virgin olive oil for everything generally now after researching it. The low smoke point etc is more relevant to an industrial kitchen/restaurants who are more likely to use a lot higher heat for longer. The exception being if you are deep fat frying at home and reusing the oil over again then not to use EVOO.
The temperatures and length of heating is not a worry in general home cooking so EVOO is fine to use for cooking and good for us.

if you want to avoid seed oil then butter and/or ghee are great options, beautiful flavour

Why pay for EV though when plain OO is cheaper and once you're heated it it isn't really EV any more?

I disagree that once heated it isn’t really EV anymore. Yes, some of the benefits are lost when heated but more benefits remain than are lost. EVOO still has the most antioxidants and nutrients and I do like the flavour. But if money was an issue then I would use OO next.

Vegetable oil is rapeseed oil

I only use olive oil, use extra virgin for dressings / sauces.
