Vegetarian meals for canivore....

Having successfully introduced a fish night during the week I thought I'd go for broke and try and institute a veggie night. This fills DH with horror. So, any recipes out there which might fill him up and not make him miss meat ?

DH does love a vegetarian lasagne I do because he used to not eat mince. So, I think given the right thing he'll be ok !!

A few 'rules'

  • No cheese as I'm allergic (although could ahve a bit on top)
  • DH says no lentils (and I don't think he'd go for quorn, tofu etc)

I quite often do a chicken and mushroom or asaparagus risotto so I think he would think something is missing !

(he's difficult I know !).

Yes mushrooms are good, as they are quite rich and "meaty". You could make a mushroom wellington or a sort of suet pudding with mushrooms in.

DP is a carnivore but likes veggie curries and tarts. Also things like falafel in pitta bread, or fajitas with onions, peppers, corn etc (he likes quorn in these too).

Pasta with a veggie sauce - could be tomato based or creamy.

Vegetarian curry if he likes curry. This is my secret way of getting dh to eat more veg and pulses!

Agree re the mushrooms - oyster mushrooms especially - good in a stir fry

I think curry might work - reminds me of a low fat butternut squash curry recipe I have somewhere which is supposed to be lovely....

I thought bean based dishes might work - bean chilli recipe anyone ?

I do veg chili (using kidney beans and tinned tomatoes, optional grated cheese/ sour cream / green onions on top) with or without cornbread (Nigella's isn't bad).
Also sometimes buy ready made puff pastry and make a veg filling - sauteed butternut squash in cubes, along with onions and garlic, and a bit of red pepper, then put into individual parcels along with feta cubes and oregano.

Minestrone soup and a good bread (lots of butter cheese on side optional) or garlic bread.

Sweet potato and coconut cream soup - this is absolutely amazing, really easy to make and freezes well too (recipe makes a big batch). It's fab with lots of crusty bread, very filling and you really don't miss meat!

I add a couple of red chillies when I make it, for a bit of extra bite

My die-hard carnivore DH will eat butternut squash risotto, and shepherd's pie made with puy lentils. That's it about it though.

Ok - I did the sweet potato/spinach curry and I think it went down relatively well. DH said 'I didn't like the sweet potato' but whne pushed he said it was because it was a 'bit chunky' and that it would have been nice with some chicken . He didn't leave a scrap on his plate though so I'm thinking it was a success ! So... will research something for next week's veggie night.

A veggie shepherds pie might work as we don't normally have shepherds' pie (I am bizarrely allergic to potato but not so much anymore so it would prob'ly be ok)....
