Roast lamb help!

PLEASE Mumsnet goddesses!

DH and I haven't cooked a roast ever.

We're doing a roast lamb tonight. It's a butterfly leg.

Instructions say 25 minutes per 500g. Then rest for 25 minutes!

Weight is 684g, which I calculate is 35 minutes. Is this really long enough? And how about resting it for that long? Won't it go cold??

Yes that's right, you usually cook it at a high temperature and leave it to rest under foil afterwards where it will continue to cook. That's if you are happy to have it pink in the middle. Otherwise it will need longer.

That’s right. Lamb doesn’t take too long to cook and you want it be pink in the middle. Cover with tinfoil and tea towels while it’s resting, it’ll retain its heat perfectly. Don’t skimp on the resting time, your lamb needs it to be tender and juicy.

Does fan make a difference?

Meat pack says 190 fan or 210 without? Our dials aren't that precise!

Yes, as fan always cooks faster and you don’t want overcooked lamb. Meet in the middle and go 200.
